No matter the season, ice cream and birthday cake recipes are always a yes in my book! But these birthday cake cookie dough ice cream bars are just another level. This recipe is super easy to make, fun and delicious while being low carb and gluten free.


No bake keto friendly and delicious ice cream cake bars! One of the best parts of this recipe is the no bake part... so basically is just mix, pour and refrigerate type of method, extremely easy! But this ice cream birthday cake bars are the perfect dessert to prepare since it takes just a few ingredients to make.

Birthday cake, caramel and cookie dough! But with that I also wanted to include a twist, a fun a de delicious twist by just using some caramel ice cream and adding some sprinkles... pure magic!


To add that extra magical factor of this recipe I also included some of the chocolate chip cookie dough bars, such a game changer and adds a really special touch to the cake bars! And it really brings up that extra taste of rich chocolate and just another extra texture. These ice cream cake bars are EPIC!

Adding some ice cream, of course! The main star of this recipe. I have been also obsessed with the KETO Foods Pint, their ingredients are always the best and the taste is always delicious too, this sea salt caramel is basically a healthy, dreamy and indulgent keto certified ice cream.



Sea Salt Caramel Ice Cream, keto certified, the magic factor! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. The base is soft and the filling of these is creamy thanks the the keto friendly ice cream, I used KETO Foods Pint, keto certified ice cream in Sea Salt Caramel.


Other delicious low carb ice creams I love is Real Good Foods and Enlightened.


I also used some grain free cereal to add that crunch. The 60% no sugar added and also keto chocolate bar to add that cover of these amazing cake pops (I'm obsessed!) also from KETO foods, these are also keto certified, so that means they are LIT.

Birthday Cake Cookie Dough Ice Cream Bars

Serves 12 servings


Ingredients

Base

  • 4 almond flour tortillas

Ice Cream Mix

  • 1 pint KETO Sea Salt Caramel Ice Cream (I used here)

  • 1 cup of greek yogurt

  • 6 Keto Chocolate Chip Cookie Dough Bars (used Core Foods)

* For vegan option use coconut yogurt and vegan ice cream ;)


Method

  1. Cover two silicone loaf dishes using the tortillas.

  2. Mix the rest of the ingredients (leave some pieces of the bars for topping) and pour over the tortillas.

  3. Add some low carb sprinkles.

  4. Freeze overnight, cut into 12 pieces and enjoy!
