These are not the usual taquito recipe, that part is very clear... we are going to be making dessert taquitos that you are going to love, promise! We are keeping the recipe low carb, vegan and keto friendly and also nourishing... using simple ingredients that are also good for you.
To keep it vegan, keto friendly and gluten free by using Almond Flour Keto Tortillas from Maria and Ricardo's, low carb milk chocolate and some low carb ice cream. So we are focusing on simple ingredients, everything so tasty.

Adding some ice cream as our filling, these reminds me, find of a cannoli, but I'm Mexican and I'm using tortillas instead... so these are my version of sweet taquitos. And well, the filling depends on you, I used my favorite low carb in birthday cake but you can use your favorite flavor in vegan, paleo or keto version as well.
I used the Almond Flour Keto Tortillas from Maria and Ricardo's that you can find at Amazon. In this occasion I used the Almond and Flaxseed tortillas but they also have Everything and Sea Salt, all three are vegan, paleo and keto friendly.

Soft and flavorful! The contrast of textures is just amazing, this sweet taco recipe is just delicious and easy to make that deserve to be made once more... maybe even more, it's just so simple and secretly healthy since we are using great tortillas and low calorie, low sugar and carb ice cream.
All the creamy goodness, extremely easy to make... gotta be one of my top taquitos recipe for sure! Haha, sweet, fun and very versatile since you can use any of your favorite ice cream flavor.
You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Birthday Cake Ice Cream Taquitos

Serves 4 servings
Ingredients
1 small pint of low carb birthday cake ice cream
1/2 low carb chocolate bar (used Let's Bake Believe in Milk Chocolate)
Method
Preheat the oven at 350F.
To make the taco shape you'll use a 12 muffin baking tray, upside down. Place the tortillas in between the cup and place a toothpick to secure it.
Bake for 18-20 minutes until the tortillas a toasted. Let it cool down.
Stuff carefully with ice cream and freeze them for a couple of hours.
Melt the chocolate and drizzle on top of the ice cream taquitos.
Add some more dye-free sprinkles, serve and enjoy!
