Brussel Sprouts Fajita Skillet (Low Carb & Vegan)

I think the brussels sprouts might be on my top five of favorite vegetables to eat and to cook; as any other vegetable it's such an easy and versatile food that the ideas are endless, this season I have been experimenting with these beauties and this time it was turn to a vegan and Mexican recipe!


One skillet and all the flavor! This brussel sprouts fajita skillet features some colorful bell peppers, red onion and of course some cheese, in this occasion I'm using a vegan cheese but you can always use your favorite one!



About these Brussel Sprouts Fajita Skillet:

Okay, this took me legit like fifteen minutes to prepare, overall! And to clean another 5 minutes tops, maybe less. That's the beauty of the one skillet recipes, they are so effortless and they don't require that much time or equipment.


We are using the basic ingredients for the fajita recipe; bell peppers and onions. Some people will add cheese and their protein of choice but in this recipe we are focusing it as a side dish mainly or a vegan recipe for you to enjoy with your friends.



And since I have been playing around with brussels, (aren't they the cutest mini cabbages?!) I decided to combine this Mexican classic along with the vegan cheese I had to to see if it melted as regular cheese. We've got a vegan winner!


Anyways, I think that the key and the stars of this recipe are the brussels, which are part of the group of the cruciferous veggies, also known for have vitamin K, A and folates. As if we had more reasons to love them, these benefits and nutritional benefits surely add to the list of the reasons on why we should eat cruciferous veggies.


They are also a source of a compound called glucosinolates; that has been proved to have anticancer properties! YAY for brussels!

  • Black Pepper

  • Red Pepper Flakes

  • Real Salt

I think that when it comes to making vegetables more appealing no matter the picky eater, or not, is always the presentation and playing with flavors; spices and herbs. For that I added some cilantro as an herb and that will also increase nutritional value.


And for spices, adding real salt, pepper and garlic really amps up any taste and aroma to the recipes; a must and another sneaky way to get some micronutrients such as minerals from the sea salt.

Simple, cheesy, playful and flavorful! A lot of qualities in this easy to make skillet. The flavors of the seasoned veggies topped with the cheese and the cilantro makes this vegan fajitas a delicious experience that make you love getting those plants in!


Not boring or unhealthy! These are a great snack for kids and grown ups! Pro tip: AA quick tip before adding the cheese (also optional) is to air fry your pretzel about 3-5 minutes depending on the intensity of your air fryer for crispier veggies!

Brussel Sprouts Fajita Skillet

Serves 4 servings


Ingredients

  • 2 cups of brussels sprouts

  • 1 cup of sliced bell peppers ( I used red and orange)

  • 1/4 cup of cheese (I this dairy free)

  • 1/4 cup of sliced red onion

  • 1 tbsp of chopped cilantro

  • 1/8 tsp black pepper

  • 1 tsp of red pepper flakes

  • 1/2 tsp of real salt

  • 1/8 tsp of garlic


Method

  1. Heat a non stick skillet or your iron skillet on medium low fire.

  2. Slice the brussels and steam them slightly in a pan with some water and black pepper.

  3. Add the sliced bell peppers in the skillet along with the red onion, let them cook for 5 minutes.

  4. Add the steamed and drained brussels to the skillet with the brussels.

  5. Add seasonings and top with cheese, add the red pepper flakes and cilantro.

  6. Cover and let the cheese melt for a few seconds.

  7. Turn off the heat and serve.
