Buffalo Everything Bagel Cheesy Casserole (Vegan & Low Carb)
I that one skillet recipes always hit that spot; and as any other food, vegetables are easy and versatile that the ideas are endless, this season I have been experimenting with these beauties and this time it was turn to a vegan and cheesy recipe!
One skillet and all the flavor! This buffalo veggie skillet features some colorful red cabbage, broccoli, zuchinni, chayote and of course some cheese, in this occasion I'm using a Vevan Foods vegan cheese; that really melts!

Okay, this took me legit the most epic veggie casserole, even a veggie hater will fall for this! The combination of flavors and textures is just out of this world; with the buffalo sauce and some almond flour for that crisp, the everything bagel seasoning and the cheese of course.
We are using the basic ingredients for this casserole, or skillet recipe; all the veggies... well, red cabbage, broccoli, zucchini and chayote squash. The ingredients mentioned earlier; buffalo sauce, almond flour and dairy free cheese (all ingredients below, on the recipe). But feel free to also add other vegetables... I personally love including different colors and these are some of my faves.

And since I have been playing around with seasonings; I included some of our all time favorites; buffalo sauce and everything bagel seasoning, plus the cheese... vegan cheese that melts. We've got a vegan winner!
Anyways, I think this is a great way to get some veggies in and if you think about it we are skillet keeping it nutrient dense. Sesame seeds from the everything bagel seasoning adds some healthy fats, zinc and some B vitamins.
Almond flour for the crust of the vegetables with some vitamin E and more healthy fats. Keeping this recipe delicious and making you feel so satisfied. It's just a must try!
The vegetables of course too! Broccoli is also a source of a compound called glucosinolates; that has been proved to have anticancer properties! YAY for broccoli!

I think that when it comes to making vegetables more appealing no matter the picky eater, or not, is always the presentation and playing with flavors; spices, herbs and sauces. In this occasion we are also including some cheese.
And for spices, adding real salt, pepper and garlic really amps up any taste and aroma to the recipes; a must and another sneaky way to get some micronutrients such as minerals from the sea salt.

Buffalo Everything Bagel Cheesy Casserole

Serves 4 servings
2 cups of broccoli
1/4 of head of a red cabbage
1/2 cup of cheese (I this Vevan)
1/4 cup of buffalo sauce
3 tbsp of almond flour
1 tbsp of everything bagel seasoning
1/8 tsp black pepper
1/2 tsp of real salt
1/8 tsp of garlic
Preheat the oven at 350F.
Slice the washed vegetables.
Pace them in an iron skillet or a baking dish.
Add garlic, salt and pepper on top. Drizzle the buffalo sauce and almond flour.
Bake for 35 minutes.
Once baked add the everything bagel seasoning
Cover and let the cheese melt for a few seconds.
Serve and enjoy!
