For this recipe I’m using amazing and fun ingredients such as Eat Royo low carb bread and Simply Delish Sugar-Free Instant Pudding in butterscotch of course! A deliciously fun low sugar and high fiber recipe that everyone can prepare at home.

We are showing some love to all my pear and butterscotch lovers some love, including myself... a childhood classic we all love! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Eat Royo low carb bread and Simply Delish Sugar-Free Instant Pudding.

Butterscotch Bread Pudding

Serves 9 servings


  • 5 slices of Eat Royo low carb artisan bread (PURELYHL for discount)

  • 1 pack Simply Delish Sugar-Free Instant Pudding in Butterscotch (PURELYHL for discount)

  • 1/2 cup of egg whites

  • 1 tsp of vanilla extract

  • 1 cup of unsweetened almond milk

  • 1/2 cup of granulated alullose

  • 1/2 chopped pear


  1. Preheat the oven at 350F.

  2. Using a hand mixer make the pudding with the pudding mix and unsweetened almond milk… beat for 3-5 minutes.

  3. Add the egg whites, toasted bread and stir well until all the bread has been covered with the mix.

  4. Transfer to a silicone 8x8 baking dish and top with pear.

  5. Bake for 30-35 minutes, let it cool down, and serve!
