There's nothing like a good caramel bar, specially when we are talking about a low carb and gluten free version that taste just like heaven, no joke... easy to make and extremely delicious while being secretly low carb.


Caramel Candied Pecan Bars made with chocolate chip keto mix! One of the best parts of this recipe is super easy to make, trust me... is that it's also so easy to make and the combination of caramel with the candied pecans will make the perfect dessert for the holidays.

Let's go beyond the classic cookie with chocolate chips and let's create a fusion of flavors that nobody will be able to resist! I also wanted to include a twist, a fun a de delicious twist by just using Good Phats as my base, a chocolate chip cookie mix that will make things ever easier.


This cookie mix just saves us a lot of steps, ingredients and it also keeps things low carb. We are just adding eggs, keto granola and MCT oil for the cookie base and the filling is also super simple to make and secretly packed with protein.

Adding some crunch for extra fun and flavor. I have been also obsessed with the Marigold Keto Pecans, their ingredients are always the best and the taste is always delicious too, these pecans are also keto friendly.


The Toppings of these Caramel Candied Pecan Cookie Bars:

With a delicious combination of pecans and caramel! In this occasion I used a homemade version of keto caramel syrup from Rx Sugar and a touch of keto granola to add some more healthy fats, crunch and flavor.



Chocolate Chip Cookie Mix! For the special touch of this recipe I decided to use some Keto Cookie Mix, this one is from Good Phats, my favorite one! Also gluten free and it's a game changer for this recipe... making it a double chocolate! Keto candied pecans, caramel and a cookie base... paradise!

The base is made with simple ingredients, Good Phats Keto Cookie Mix as part of our delicious base to make these even more delicious and easy to make, eggs and MCT oil, that can also be replaced by ghee, coconut oil or butter.

You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Caramel Candied Pecan Cookie Bars

Serves 9 servings


Ingredients

Cookie Base

  • 1 cup of Good Phats Keto Cookie Mix (PURELYHL for discount)

  • 2 eggs

  • 2 tbsp of MCT Oil or ghee

  • 1/2 cup of keto granola

Toppings

  • 1/2 cup of keto granola

  • 1/2 cup of crushed Marigold Candied Keto Pecans (PURELYHL for discount)

  • 1/3 cup of Keto Caramel Syrup



Method

  1. Preheat the oven at 350F.

  2. Mix the cookie mix with the, granola, eggs and MCT oil.

  3. Place the dough in a 8x8 silicone baking dish.

  4. Top with granola, candied pecans and caramel syrup.

  5. Bake for 24-26 minutes.

  6. Let them cool down, cut into 9 pieces and enjoy!
