Caramel Cookie Almond Cups (Keto, Protein, Vegan)


I think we all have those lists in our phones with all the things we want to try, we need to buy, or just some things we want to remember. As a creator and nutritionist I have some of those lists with the recipe ideas that pop into my brain and lists of the cool facts from podcasts or videos I listen and/or watch.


In that list I clearly noticed that I love peanut butter and chocolate recipes, but still I don't want to do similar recipes over and over again. So in this case I made a great twist! Caramel Almond Cups!


This recipe was inspired on the classic chocolate we all know: Sneakers Bars, I think we all grew up eating them and to be honest as a kid I wasn't a fan of peanuts so it wasn't my favorite bar. I was always was and still am a chocolate peanut butter cup gal.


We are taking things to the next level here:

- Almonds

- Cookies

- Caramel

- Chocolate


I mean, not even the highly processed candy can keep up with this. And the great news is that we are using friendlier ingredients for our bodies; these cups are keto, gluten free, dairy free and vegan friendly!


The first layer on these cups is made entirely from Nuzest Plant Based Protein Powder, it may sound crazy but this is one of the best tasting vegan proteins our there. And speaking as a food blogger, I get to try a lot of vegan proteins and from my own experience I can tell you that these are MY TOP THREE VEGAN PROTEINS!

I base this top three on taste, ingredients and quality. They don't taste fake, chalky or plain. They do have great taste while keeping my standards for good ingredients, no funky ingredients, fillers, artificial ingredients, loads of sugars and colorings.


Well, in this case the base is the chocolate flavor and it actually taste just like ice cream. And the middle layer is made from almond butter in powder.


We all know that peanut butter flour, it's great for baked goods, it's one of my staples to bake some peanut butter goodies, but this one is jussssst the same but made from almonds, I got a huge jar one of the times I was walking peacefully throughout the aisle of Costco.


So for the second layer we are using this almond flour, with some Lakanto Caramel Liquid (keto friendly), cinnamon, coconut cream (from a can) and granulated monk fruit. This is the caramel layer and it's really really good!


For toppings, one of the best parts and what actually makes this recipe EXTRA special. Mini Keto Cookies that I got from Eat For Keto at Amazon, low carb chocolate chips (I use ChocZero) and sliced almonds.


I will be also lying if the inspiration of this recipe was based on the things I got in my pantry. But not entirely, the main idea luckily fit my stocked pantry! And these are just staples that I have for baking!


- Nuts

- Low Carb Chocolate Chips

- Low Carb Vegan Proteins

- Granulated Monk Fruit

- Canned Coconut Milk and Cream

- Nut Flours

- Coconut Flour


But in this recipe we are only using a few of these to create this SIMPLY EPIC snack! Great to have on your freezer ready to attack, being keto and that will keep you fuel since each bite has 14 grams of healthy fats, 9.3 grams of protein with only 4.7 net carbs!

Caramel Cookie Almond Cups

Method

  1. In a mixing bowl add combine the protein powder with liquid and pour into twelve silicone cups.

  2. Freeze for 20 minutes.

  3. Mix the ingredients for the almond butter layer and top the chocolate layer.

  4. Add the toppings and freeze again!
