There's nothing like a good caramel drink during winter season, specially when we are talking about a low carb and gluten free version that taste just like heaven, no joke... easy to make and extremely delicious while being secretly low carb.
A creamy caramel latte with a crunch of cookies and white chocolate! One of the best parts of this recipe is super easy to make, trust me... is that it's also so easy to make and the combination of caramel with coffee and white chocolate will make the perfect dessert for the holidays.

Let's go beyond the classic latte and let's make a cozy festive drink! I think gingerbread and caramel are just the perfect call for this holiday season, but at the same time I'm also about a good cold latte, anyone else feels the same way?
This caramel syrup is the one we are using, it's keto certified, which means that it's also made with simple, real ingredients. When it comes to keto labels the keto certifications always comes in heavy for me because that way I know that I can trust this product. So this one was the one used on my caramel gingerbread cookie latte recipe.
Adding some protein, creaminess and flavor too! I have been also obsessed with the Marigold Grass-Fed Creamy Vanilla Whey Protein, their ingredients are always the best and the taste is always delicious too, and I personally love whey as a source of protein, great for recovery too! Seriously the best tasting keto caramel ever! In this occasion I used this keto caramel syrup from Rx Sugar to give that caramel touch without adding tons of sugar or weird ingredients, as mentioned earlier their ingredients are simple and based from allulose.
The cookie topping! For the special touch of this recipe I decided to use some High Key Nutrients, wafers! Also gluten free and it's a game changer for this recipe... making it extra fun, plus who doesn't love a good crunch touch?!

The base is made with simple ingredients, Willa's Oatmilk (I also like this one because of the simple ingredients here), that adds creaminess, some Rx Sugar alullose, of course, keto caramel syrup and Marigold Grass-Fed Creamy Vanilla Whey Protein, along with our spices; cinnamon, ginger and a touch of clove and nutmeg.

Caramel Gingerbread Cookie Latte

Serves 1 serving
For the latte
1/3 cup of Oatmilk
1 cup of black coffee
1/2 tsp of cinnamon
1 tsp of ginger
A dash of clove and nutmeg
1 scoop of Marigold - Creamy Vanilla Whey Protein (for vegan version I love Nuzest)
1 cup of ice
2 tbsp of Rx Sugar - Caramel Syrup
6 Keto Vanilla Wafers (used High Key Nutrients)
1 tbsp of white Chocolate Chips
Christmas Keto Sprinkles
Add all the ingredients for the latte in a blender.
Press for 30 seconds.
Serve in a tall glass and add your toppings.
