Cheesy Easy Guacamole (Low Carb, Gluten Free)


Hello everyone! Maria here with another classic family recipe, in this occasion I'm going to make a guacamole that I have only seen my family do for a weird reason, or maybe I just need to get to know more people, but oh well! Here it goes!


My family has been doing carne asada for as long as I can remember. Sundays were made to carne asada and family, a special part of my Mexican heritage, specially here in the north of Mexico.



Essential for a genuine carne asada reunion:

  • Carne asada

  • Grilled onions

  • Pico de Gallo

  • Tortillas

  • Refried Beans

  • Guacamole

  • Family


Those are just essentials according to my very Mexican family. Family is so important for us Mexicans and that something that I love. I remember growing up that all weekends were for family reunions, playing with my cousins and food.


And ever since I remember that guacamole was made mostly this way, but of course, my 7 year old self didn't like avocado and cottage cheese. This changed till later in my life and I'm so glad because this guacamole recipe is seriously delicious!



The key ingredients in this super easy guacamole recipe are:

  • Avocado

  • Cottage Cheese

  • Bone Broth

  • Cilantro

  • Jalapeño



We are giving it a gut friendly twist!

Of course back we weren't very much aware of the importance of our gut health, we were basically just "Livin' la Vida Loca" regarding food, but here I am, a professional nutritionist, food blogger, taking care of my family's gut, clients and your gut as well!



What makes this recipe gut friendly?


Probiotic rich cottage cheese. Just making the switch from conventional cottage cheese can make a difference, since we are also supporting companies that make their cottage cheese in the correct process, a proper fermentation.



Bone broth! Instead of regular broth powder like Knorr, which is loaded with artificial ingredients and flavors, plus most likely to contain MSG. I am using bone broth sticks from Bare Bones, but Lono Life is also a great option!



The good thing about guacamole, avocado over all is that it's super versatile! From savory to sweet, it's a great way to get loads of micro-nutrients among with some healthy fats! It's filling and just one of my favorite foods ever!

These are just amazing recipes with a sweet taste that it's actually so so good! I really like making pies as you can see with these babies. But this is time for a good old classic with the twist of my family. Cottage cheese with guacamole, EPIC!



If you haven't tried this yet, well, you are up to trouble! I thought it was crazy at first but it actually a great combination of flavors and textures. A great way to add some calcium to the recipe.



Anyways, this recipe is super easy and you just need ONE mixing bowl for that. It goes perfect with some of these few ideas!


  • Grilled chicken

  • Carrots Chips

  • Jicama Sticks

  • Paleo Chips (like Siete Foods)

Cheesy Easy Guacamole

Serves 4

Ingredients

  • 1 avocado (peeled)

  • 1/2 cup of cottage cheese

  • 1 bone broth stick (I used beef flavor)

  • 1 tsp of sea salt

  • 1/4 tsp of black pepper

  • 1/4 tsp of garlic powder

  • 2 tbsp of chopped fresh cilantro

Method

  1. In a bowl mix all the ingredients.

  2. Serve and ENJOY!
