Cherry Brownie Ice Cream Cake (Low Carb & Gluten Free)

No matter the season, brownies are always a yes in my book! But these cherry brownie ice cream cake is just another level. This recipe is super easy to make, fun and delicious while being low carb and gluten free.


No bake gut friendly and delicious ice cream cake! One of the best parts of this recipe is the no bake part... so basically is just mix, pour and refrigerate type of method, extremely easy! But this ice cream cake are gut friendly since we are working with beef gelatin, keto ice cream, keto brownie cookies and no gluten!



About these Cherry Brownie Ice Cream Cake:

Cherry and rich chocolate flavors! But with that I also wanted to include a twist, a fun a de delicious twist by just adding some of cherries to keep it seasonal, keto ice cream and the simple base!


To add that extra magical factor of this recipe I also included some of the Lesser Evil keto brownie cookies, such a game changer! And it really brings up that extra taste of rich chocolate and just another extra texture. This ice cream cake is EPIC!


Key Ingredients:

Adding some protein powder for extra creaminess and a satisfying filling. I have been also obsessed with the Nuzest Smooth Vanilla Plant Based Protein, their ingredients are always the best and the taste is always delicious too, this smooth vanilla is basically a healthy, dreamy and indulgent vanilla milkshake (keto and gluten free!).



Brownie cookies and grain free, the magic factor! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. The base is soft and the filling of these is creamy thanks the the keto friendly ice cream, I used Killer Creamery.


Other delicious low carb ice creams I love is Real Good Foods and Enlightened.


I also used some grain free cereal to add that crunch. The yummiest brownie cookies (I'm obsessed!) from Lesser Evil, these are also keto certified, so that means they are LIT.

The base of this Cherry Brownie Ice Cream Cake:

The base is made with simple ingredients and Nuzest Smooth Vanilla pea protein (or coconut flour) to keep it nutrient dense and gluten free. Since we are not using any eggs we are using beef gelatin as our glue for these bars, it's just my favorite ingredients when it comes to no bake recipes.

Soft and flavorful! The contrast of flavors and textures is just amazing, the toppings are just divine... the cherries with the brownie cookies work perfectly with the chocolate keto ice cream filling of this ice cream cake but the good crunch of the cereal.


Melts in your mouth! The cherries and the brownies on top makes this ice cream cake a dream... soft and just perfect to enjoy no matter the season.



You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Cherry Brownie Ice Cream Cake

Serves 9 servings


Ingredients

Base

  • 1/3 cup of almond flour

  • 1/2 cup of Nuzest Vanilla Smooth Pea Protein

  • 3 tbsp of beef gelatin

  • 1 cup of hot water

  • 1 tsp of cinnamon

  • 1/3 cup of granulated monk fruit

Filling

  • 2 keto pints of (500g) of keto friendly ice cream (I used this)

  • 9 LesserEvil Keto Brownie Cookies

  • 1 cup of frozen cherries


Method

  1. Mix the almond flour, beef gelatin, monk fruit, pea protein and cinnamon.

  2. Add the hot water and mix well.

  3. Transfer the dough into a 8x8 silicone baking dish and press the dough evenly.

  4. Refrigerate for 10-15 minutes.

  5. Blend the ice cream in a bowl until it gets soft.

  6. Spread the ice cream over the base.

  7. Cut the brownies and add the cherries.

  8. Freeze a few hours or overnight and cut into 9 pieces.

  9. Enjoy!
