We are showing some love to all my ice cream, cereal and brownies enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding the cottage cheese and a touch of chocolate chip cereal to add volume and a nice touch along with a some fudgy brownie layer.

Keeping it extra delicious, healthy and just epic by using some chocolate protein pancake mix for the that great taste and texture, and to make it even healthier we are using RxSugar alullose as our sweetener, some yogurt and of course some of this fantastic Magic Spoon Cereal in Chocolate Chip. A great healthy recipe without sacrificing great taste!
You won't see cereal and pancake mix another way from now on! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little loaves, also ready yo attack that sweet tooth at any moment.

The base is made with simple ingredients, some protein pancake mix in chocolate, cottage cheese, sugar-free coconut milk chocolate and to keep things sweet some RxSugar alullose, and for the bread I have been loving this Magic Spoon Cereal in Chocolate Chip. The perfect texture for the cheesecake filling.
Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using abullone or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

The end result
Okay, from now on it will be hard for me to eat pancake mix and cereal another way! These are super easy to make and just super yummy, plus good for you. I have been trying to increase my protein so these are just the perfect snack, dessert or post workout.

Chocolate Chip Cereal Ice Cream Protein Brownies

Serves 9 thick bars
Ingredients
Brownie Layer
1 cup of chocolate pancake mix (or regular one)
1/3 cup of RxSugar alullose
1/2 cup of melted sugar-free milk chocolate
1 cup of hot unsweetened almond milk
1 cup of Magic Spoon Cereal in Chocolate Chip
Ice Cream Layer
1 cup of cottage cheese
1/3 cup of unsweetened almond milk
1 tsp of vanilla extract
2 cups Magic Spoon Cereal in Chocolate Chip
1/3 cup of RxSugar alullose
Method
Preheat the oven at 350F.
Soak the cup of cereal for the brownies with the unsweetened almond milk.
Mix all the dry ingredients for the brownies, then add melted chocolate and cereal mix.
Spread the batter into a 8x8 silicone baking dish and bake for 20 minutes.
Blend all the ingredients for the ice cream mix except for the cereal.
Stir the ice cream blend with the cereal and pour over the cooled and baked brownie layer.
Freeze for a couple of hours and enjoy!
