Cookie Dough Peanut Butter Cups (Keto, Egg Free)

Okay guys, here I go! This weekend has been super busy and my mind needs a break and this is the last blogpost that needs to be done from the weekend. And don't get me wrong! I love writing down these but at the moment my mind is screaming at me to give it a break, so LET'S DO THIS!

My weeks usually include recipe development, blog stuff, clients, creating creative content so you can bet that I get busy, something that I really like. That's a good thing about me but also one of my weaknesses, sometimes I don't get enough rest.

As a nutritionist I know that for a healthy body we need more than just good food, food that nourish us but we also need to give our bodies a break.

Other factors that should be included in a healthy lifestyle include:

  • Sleep

  • Self care

  • Letting yourself a little bit loose

And for example, on those day when I don't feel like cooking meal preps always come in handy to save my life! Because I generally don't like takeout food, rarely a takeout food will satisfy my appetite or tastebuds so I prefer home-cooked meals.

Meal prep also goes beyond savory meals, I also prepare weekly sweet recipes because EVERY single human gets that desire, the desire of something sweet and it can be possible to eat nourishing foods while being keto, paleo, vegan or any type of lifestyle you enjoy!

In this occasion, let me introduce you to these EASY and NO BAKE Cookie Dough Peanut Butter Cups! Just using some simple ingredients:

  • Coconut Flour

  • Beef Gelatin

  • Granulated Monk Fruit (PURELYHL for discount)

  • Cinnamon

  • Dairy Free Chocolate

  • Grain Free Keto Granola

  • Almond Butter

As I mentioned before these are super easy to make and they don't require any baking. Perfect for this summer season! Also a tastebud and crowd pleaser. For this recipe you only need a few supplies, here's what you need to gather:

  • One Mixing Bowl

  • One Mixing Spoon

  • One Little Pot

  • One Mug

  • One Silicone Muffin Mold of Twelve

  • One Measuring Cup

This makes twelve cups, this is why I love making my recipes in batches of twelve because this is a great ay to store them and to have plenty for the week! Almost two per day, plus the other snacks that I already have in my freezer hehe.

Well, and since this is no bake recipe and egg free recipe we are using beef gelatin! This has been my current ingredient love and hack for this summer season and some of the no bake recipe I have been doing this season.

Beef gelatin also provides essential amino acids! So that's a double win! More of the nutrient dense we are including is almond butter, hello vitamin E and healthy fatty acids, and for some antioxidants we are using real chocolate! Dairy free and minimally processed.

Each one of these bites has only 10.1 grams of total carbs with 5.2 grams of fiber, that makes 4.9 net carbs! So this is a great keto friendly snack, plus also being egg free, gluten free and dairy free!

So you can count of this recipe to have great taste, a soft texture and lovely consistency! My tastebuds really liked every of the bites I took from them! Sharing is allowed but not obligatory! Perfect for all my chocolate peanut butter lovers!

So get ready for this simple no bake recipe! Don't to share, save, bookmark or pin this recipe for later! ENJOY!

With love,

María
