I could live in summer season by heart and by belly all year long, the weather on the other side... living in the desert doesn't help on that side but the fact that no bake recipes are probably my favorite ones to make and these ice cream bars are just perfect for the mood!


No bake gut friendly and delicious ice cream bars! One of the best parts of this recipe is the no bake part... so basically is just mix, pour and refrigerate type of method, extremely easy! But this ice cream bars are gut friendly since we are working with beef gelatin, keto ice cream, keto brownie cookies and no gluten!

A honey cinnamon base with cherry and vanilla ice cream covered in chocolate! An epic recipe that you can resist! All about this recipe is gluten free and low sugar since we are using lower sugar graham cookies and keto ice cream as well as the chocolate chips.


To add that extra magical factor of this recipe I also included some of the cherries to keep it seasonal! And it really brings up that extra taste of rich chocolate and just another extra texture. This ice cream bars are EPIC!


Key Ingredients:

Adding some gut love and health to this recipe by using beef gelatin, in replacement of eggs for this no bake recipe. I have been also obsessed with beef gelatin on my no bake desserts since it's super easy to use and adds essential amino acids that will support our gut!

Cherries and Ice Cream while being low carb! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. The base is soft and the filling of these is creamy thanks the the keto friendly ice cream, I used Killer Creamery.


Other delicious low carb ice creams I love is Real Good Foods and Enlightened.


Plus the addition of cherries will be a great afternoon snack since cherries tend to promote melatonin production in our bodies.

The base of this Honey Graham Cherry Ice Cream Bars:

The base is made with simple ingredients I crumbled three servings of Simple Mills Honey Cinnamon Thins and it made one cup of crumbled cookies, you can use almond flour too! to keep it healthier and gluten free. Since we are not using any eggs we are using beef gelatin as our glue for these bars, it's just my favorite ingredients when it comes to no bake recipes.

Soft and flavorful! The contrast of flavors and textures is just amazing, the toppings are just divine... the cherries with the brownie cookies work perfectly with the chocolate keto ice cream filling of this ice cream cake but the good crunch of the cereal.


Melts in your mouth! The cherries and the brownies on top makes this ice cream cake a dream... soft and just perfect to enjoy no matter the season.


Low Carb & Gluten Free

You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Honey Graham Cherry Ice Cream Bars

Serves 6-12 servings


Ingredients

Base

  • 1 cup of crumbled honey cinnamon paleo cookies (I used Simple Mills)

  • 1+1/2 tbsp of beef gelatin

  • 3/4 cup of hot almond milk

  • 1/3 cup of granulated monk fruit

Ice Cream Filling

  • 1 keto pints of (250g) of vanilla keto friendly ice cream (I used this)

  • 1 cup of frozen cherries

Coating

  • 1 cup of low carb chocolate chips (I used Evolved)


Method

  1. Mix the crumbled cookies, beef gelatin and monk fruit.

  2. Add the hot almond milk and mix well.

  3. Pour 1/4 cup of the mix into a silicone mold of 6 or 12 (I used this)

  4. Refrigerate for 10-15 minutes.

  5. Spread the ice cream over the base.

  6. Add the cherries.

  7. Freeze a few hours or overnight and cut into 12 pieces.

  8. Melt the cup of chocolate and dip each bar, freeze again.

  9. Enjoy!
