  • 1 teaspoon baking powder

  • 1 teaspoon baking soda

  • 1/4 teaspoon sea salt

  • 1/2 cup coconut milk

  • 2 teaspoons vanilla extract

  • 2 eggs

  • 3/4 cup organic sour cream or Greek yogurt

  • 2/3 cup monk fruit sweetener

For the Horchata Frosting & Filling:  

  • 1 cup powdered monk fruit
