Serves 6 slices
Ingredients
1 cup of gluten-free flour
3/4 cup of cornmeal
1 tsp of baking powder
1 tsp of baking soda
1/4 tsp of sea salt
1/2 cup coconut milk
2 tsp of vanilla extract
1/2 cup of Nutiva Organic Coconut Oil
2/3 cup of coconut milk
1/4 cup of coconut yogurt (or applesauce)
2/3 cup of granulated monk fruit
Coconut Filling & Frosting
1 cup of powdered monk fruit
½ cup of Nutiva Coconut Mana (room temperature)
1 pack of cream cheese (room temperature)
2 tsp of vanilla extract
1 tbsp of coconut milk
Decoration
1 cup of sliced strawberries
Instructions
Preheat your oven to 350°F (175°C). Grease a loaf or round cake pan with Nutiva Coconut Oil.
Mix the dry ingredients (gluten-free flour, cornmeal, baking powder, baking soda, salt) in a bowl. Add in wet ingredients (coconut milk, vanilla, coconut oil, yogurt/applesauce, monk fruit) and blend until smooth.
Pour batter into the prepared pan and bake for 40-45 minutes, until a toothpick inserted in the center comes out clean.
Cool the cake completely; then slice it in half horizontally.
Prepare the frosting by blending Nutiva Coconut Mana, cream cheese, vanilla, and coconut milk until smooth.
