"Kinder Bueno" Low Carb Cheesecakes (Gluten Free)

We all love a good classic, right? Well, I grew up eating kinder buenos all the time and now I'm creating my own healthy version... in a cheesecake with Hela Hazelnut Spread from Bubble (they rock), keto friendly cookies and simply epic. Hard to tell that these are actually healthy!


The combination of flavors, plus the consistency of these is just a whole new level and perfect for any occasion or time of the year! These are also great for meal prep since you can keep them in the freezer or to simply share with your nut health friends.

So the base of these pies is made by Hella Cacao Hazelnut Spread from Bubble, made with just three organic ingredients and with way less sugar than the conventional options. I also added some dark chocolate chip cookies on top just because to make these kinder bueno keto pies even better!

I kept it very simple. I just mixed some keto bread mix, monk fruit, vanilla en egg whites. You can find everything at Bubble (I'm seriously obsessed). And for the filling of course we are using some of their cacao hazelnut spread, cream cheese and for the toppings cookies (because why not?), raw hazelnuts and white chocolate chips.



One of the best parts of this recipe is that it's just super easy to make, basically fail proof and with simple ingredients; no refined sugars, flours or oils. Instead healthy version of our favorite staples; Hella, Mummly keto friendly cookies, monk fruit, organic cream cheese.

"Kinder Bueno" Low Carb Cheesecakes

Serves 12 servings

Method

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the base, then add the hot water, egg whites and stir well.

  3. Transfer the dough into 12 silicone muffin cups and using your hands create little cheesecake bases.

  4. Bake for 15-18 minutes.

  5. Mix the cream cheese, Hella Hazelnut spread, vanilla and alullose.

  6. Top the cheesecake base with the cream cheese mix.

  7. Add your toppings.

  8. Enjoy!
