Peachy & Spicy Salmon Bites

Serves 4
Ingredients:
Salmon
4 pieces of wild-caught salmon
½ tsp of garlic powder
⅛ tsp of black pepper
1 tsp of sea salt
1/2 cup of unflavored whey protein (or flour)
1/2 cup of egg whites
1 cup of Kooshy Sourdough Panko
Peach Glaze
1/2 cup of Ceres Juice 100% Juice Blend in Peach
1 tbsp of sriracha sauce
1 tbsp of granulated monk fruit
1/4 tsp of ginger powder
1 tbsp of cornstarch
Serving
Steamed Vegetables
Cooked Rice
Dried Green Onion
Sesame Seeds
Instructions
Remove the skin of the salmon carefully. Cut the salmon into cubes.
Add whey protein in one bowl, egg whites in another bowl and sesame seeds in another one.
Dip each salmon bite into whey protein then into egg whites and finally cover them in panko.
Place in your air fryer basket and air fry for 20 minutes at 355F, (shake half-way through).
Mix the ingredients for the glaze in a microwave safe bowl and microwave for 2:00 minutes, stir well and let it cool down.
Serve with vegetables, top with green onions, peach glaze, sauce and sesame seeds and enjoy!
