This is my iconic Raspberry Matcha Kefir Pie, made with the best and simplest ingredients, no need to complications or a lot of messy dishes to create this recipe and to enjoy a healthy meal!



About this Raspberry Matcha Kefir Pie:

This recipe overall is low carb, low sugar, gluten free and of course, delicious. I used the Organic Whole Milk Kefir from Kalona SuperNatural as my secret ingredient that will make this recipe so moist and extra moist... hard to say no to this one!


This is just a great snack to make anytime of the year! It's an unmissable recipe that everyone will love and will also nourish your body... since Kalona is made from grass-fed cows on small family farms who practice regenerative farming, Non- homogenized, low temp pasteurized dairy- as closest to raw milk as possible.



Nutrient dense and flavorful kefir pie roll for the win! The key to have a sustainable healthy life is to preach balance and to also choose better ingredients when you are cooking or baking at home... the ingredients here are a some of the staples that I usually have in my own kitchen.

Raspberry Matcha Kefir Pie

Serves 4-8


Ingredients

Base

  • 2 cups of grounded rice cakes

  • 2 tbsp of matcha

  • 1 tsp of vanilla extract

  • 1/3 cup of alullose

  • 1/2 cup of egg whites

  • 1/2 cup of water

Filling

Toppings

  • 1 cup of raspberries

  • 1/4 cup of shredded unsweetened coconut

Method

  1. Preheat the oven at 350F.

  2. Blend the rice cakes and mix with the rest of the ingredients for the base.

  3. Spread in two small baking dishes or a large one.

  4. Bake for 10 minutes.

  5. Blend the ingredients for the filling and pour over the baked based.

  6. Bake for 18 minutes.

  7. Let it cool down and add the toppings, slice and enjoy!
