We all love a good Mexican recipe... specially tacos, right?! So I'm bringing this mashup of a taco bake that will swing the classic tacos to the park, this recipe is super easy to make and perfect for lunch, dinner and even brunch!


Chipotle, tortillas, smoked tuna... the dream team in a Mexican seafood recipe! This is just a classic Mexican combo with a fun healthy twist, we are making these taquitos or you can also air fry them, this is a keeper, plus the chipotle crema here is so key to take these to another level!



About these Smoked Tuna Baked Taquitos with Chipotle Crema:

I'm such an Mexican food person, and no matter the time of the day I'm always down for a Mexican inspired recipe! So in this case I got inspired by one restaurant and created my own healthier and yummier version of baked smoked tuna taquitos... these are baked, not fried, and using cottage cheese sainted of heavy cream for our topping!


Creating a fun taco egg bake with some of my favorite Mexican breakfast ingredients such as tortillas, eggs, chorizo and Mexican cheese... in this occasion I'm using queso panela.


Key Ingredients:

The key ingredient on any taco recipe recipe is of course, tortillas! And I know that corn tortillas are the ones we usually use but I'm here to tell you that using Fiber-Rich Whole Wheat Tortillas from Maria and Ricardo's, is a game changer, these only have 4 net carbs and 45 calories per serving.

Smoked Tuna Baked Taquitos with Chipotle Crema

Serves 4 servings


Ingredients

  • 4 Fiber-Rich Whole Wheat Tortillas from Maria and Ricardo's

  • 2 cups of shredded smoked tuna

  • 2 limes

  • 1 chopped tomato

  • 1 chopped jalapeño

  • 1/4 cup of chopped onion

  • 1/4 cup of chopped cilantro

Chipotle Crema

  • 1 cup of cottage cheese (or ricotta)

  • 2 tbsp of chipotle

  • 1 tsp of pink salt

  • 1/2 tsp of black pepper

  • 1 tsp of garlic

  • 1 tsp of dried onion


Method

  1. Mix the ingredients for the tuna in a bowl except for the tortillas.

  2. Cook in a non-stick skillet for 10 minutes, stirring occasionally.

  3. Heat the tortillas in the microwave for 10-15 minutes.

  4. Stuff them with 3-4 tablespoons of the tuna mix and roll them carefully.

  5. Repeat this step with leftover ingredients and place them in the air fryer or oven.

  6. Air fry for 18 minutes at 370F. Or bake for 25-30 minutes at 350F.

  7. Blend the ingredients for the crema and top the baked taquitos with it.

  8. Serve and enjoy!
