Okay, so what makes a french toast casserole what they are is the bread, so we I'm using Carbonaut that it's gluten free and low carb, my staple that I keep in my freezer (optional) or in the pantry.
Of course whipped goat's milk cheese (used Soignon), the base of this casserole and that also adds some vitamins, nutrients and protein. And of course, jalapeños that will add that kick of spiciness with the chorizo too... but not too spicy, don't worry. Just enough to hit the sweet spot.
And for spices, adding real salt, pepper and garlic really amps up any taste and aroma to the recipes; a must and another sneaky way to get some micronutrients such as minerals from the sea salt.

Chorizo Jalapeño Goat Cheese French Toast Casserole

Serves 9 servings
5 slices of low carb gluten free bread (used Carbonaut)
5 oz. of whipped goat cheese (used Soignon)
3 jalapeños (roasted)
1 cup of cubed panela cheese (or mozzarella)
1/4 cup of cooked chorizo
1/2 tsp black pepper
1 tsp of real salt
1 tsp of garlic
Preheat the oven at 350F.
Toast the bread in the oven and cut into squares.
Mix the eggs, salt, black pepper, garlic and jalapeños and mix well.
Add the whipped goat cheese and mix again till fully incorporated. Add the leftover panela cheese and mix.
Add the toasted bread pieces in a greased 8x8 baking dish and add the goat cheese mix.
Top with chorizo and bake the casserole for 30-35 minutes.
Let it cool down, cut into 9 pieces.
