Of course whipped goat's milk cheese (used Soignon), the base of this casserole and that also adds some vitamins, nutrients and protein. And of course, jalapeños that will add that kick of spiciness with the chorizo too... but not too spicy, don't worry. Just enough to hit the sweet spot.


And for spices, adding real salt, pepper and garlic really amps up any taste and aroma to the recipes; a must and another sneaky way to get some micronutrients such as minerals from the sea salt.

A cheesy and flavorful french toast casserole for all my spicy and cheesy food lovers, super comforting. The touch of the jalapeños and chorizo one top adds such a nice touch and flavor to the recipe... plus who doesn't love cheese, right?


I enjoyed mine for dinner or lunch, with some extra greens as a side and roasted onions... but you can also add some extra salsa as well and you will have such a great bite to enjoy... and healthy too!

Chorizo Jalapeño Goat Cheese French Toast Casserole

Serves 9 servings


Ingredients

  • 5 slices of low carb gluten free bread (used Carbonaut)

  • 5 oz. of whipped goat cheese (used Soignon)

  • 3 eggs

  • 3 jalapeños (roasted)

  • 1 cup of cubed panela cheese (or mozzarella)

  • 1/4 cup of cooked chorizo

  • 1/2 tsp black pepper

  • 1 tsp of real salt

  • 1 tsp of garlic


Method

  1. Preheat the oven at 350F.

  2. Toast the bread in the oven and cut into squares.

  3. Mix the eggs, salt, black pepper, garlic and jalapeños and mix well.

  4. Add the whipped goat cheese and mix again till fully incorporated. Add the leftover panela cheese and mix.
