Such a great combination of flavors and textures in this creamy and soft strawberry yogurt filling along with these amazing low carb and high protein ice cream cookies from Mad Minis... the obsession is real!

For this recipe I’m using amazing and fun ingredients such as greek yogurt, cookie ice cream sandwiches from Mad Minis vanilla ice cream sandwiches, that will go along a chocolate base. A great protein snack to fuel your body. Delicious, low carb friendly strawberry cookie protein pie bar!

We are showing some love to all my strawberry and "Oreo" fans... a classic we all love! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Mad Minis vanilla ice cream sandwiches and some greek yogurt that I will add that thickness factor while keeping things low carb and delicious!

This recipe is easy, quick and nutrient dense... also so fun!

Adding some gluten free and low carb cookies from my faves, Mad Minis vanilla ice cream sandwiches for the toppings of these pie bars. I have been also obsessed with greek yogurt on recipes, the ingredients are simple, low carb and gluten free... plus the taste is just delicious.

And the base, high protein and low carb thanks for the mix of chocolate Nuzest Protein (PURELYHL for discount) and some egg whites, easy EASY PEASY and delicious!

A fluffy low carb base, a creamy strawberry filling with some cookie ice cream sandwiches on top... the dream team! Strawberry Cookies & Cream Pie Bars

Serves 9 servings





  1. Preheat the oven at 350F.

  2. Mix all the ingredients for the base.

  3. Spread the mix in a 8x8 silicone small baking dish.

  4. Bake for 15 minutes.

  5. Spread the yogurt on top of the base already baked base.

  6. Top with ice cream sandwiches, cut into 9 pieces.

  7. Enjoy!
