For this recipe I’m using amazing and fun ingredients such as keto cookies, keto friendly strawberry jel dessert, coconut cream, low calorie hazelnut spread. A great easy snack to fuel your body. Delicious, keto friendly and gluten free and vegan no bake bars!

This recipe is just for those lazy days or just when you need a recipe that doesn't require a lot of steps or mess. I also wanted to include a twist, a healthy and still delicious twist by just adding some Simply Delish strawberry jell dessert mix along with some coconut crea, keto cookies and a creamy hazelnut spread.

Adding some magic from instant jel dessert mixes for extra density and a flavor. I have been also obsessed with the Simply Delish jel desserts and instant pudding mixes, the ingredients are simple, vegan friendly, low carb and gluten free... plus the taste is just delicious.



Coconut cream, strawberries and a delicious hazelnut cookie topping, the dream team! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. While keeping your body and tastebuds happy thanks to the simple ingredients.

The base is made with simple ingredients; Simply Delish Keto and Vegan strawberry jel dessert mix and alullose. Along with some oat milk and coconut cream for that extra thickness and addition of healthy fats.

The end result

Soft and flavorful! The contrast of flavors and extremely creamy is just amazing, the hazelnut spread with the flavor of strawberries and cookies is just a match made in heaven! If you leave it in the freezer let it sit in a bowl for a few minutes for a creamy ice cream consistency.


Melts in your mouth! It's soft and chewy thanks to the nice crunch of the keto cookies used inside the mix and the topping. A recipe with flavors that are hard to resist... sharing was optional. Did I shared? Noup.

Strawberry Hazelnut Cookie Icebox Cake

Serves 6 servings


Ingredients

  • 1 pack of Simply Delish Strawberry Jel Dessert

  • 1 cup of coconut cream

  • 1 cup oat milk (hot)

  • 16 mini keto cookies

  • 2 tbsp of low carb hazelnut spread

Method

  1. Blend the coconut cream, oat milk and Strawberry Jel dessert.

  2. Pour into a silicone loaf dish and add 8 keto cookies.

  3. Freeze overnight, and then top with hazelnut spread and more keto cookies.
