1 1/2 cup of gluten-free flour
1/2 cup of granulated monk fruit
4 scoops of Marigold Hot Cocoa Collagen
1/2 cup of chocolate pancake mix (used Dilettoso)
2 tsp of pumpkin spice
1 tsp of baking powder
1 tsp of baking soda
1/2 tsp of baking salt
2 whole eggs
1 cup of pumpkin puree
3/4 cup of sour cream
1/4 cup of coconut oil (melted)
2 tsp of vanilla extract
2 chopped bars (used Bon Better in Nirvana Fudge)
1/3 cup of chopped pecans
Topping
1 cup of powdered monk fruit
2 tbsp of sugar-free maple syrup
Instructions
Preheat your oven to 350°F (177°C) and line a loaf pan with parchment paper.
In a large bowl, whisk together gluten-free flour, almond flour, pumpkin spice, baking powder, baking soda, and salt.
