Tres Leches Strawberry & Peach Pudding French Toast

There's something about french toast recipes that instantly makes my tastebuds jump, anyone else or just me? Well, this recipe has a little twist. Inspired by my favorite Mexican Cake, tres leches, I created a sauce with a touch of peaches! Simply irresistible.


For this recipe I’m using amazing and fun ingredients such as low carb bread, keto friendly peach jell dessert, strawberries, and some coconut milk in powder. A great protein dessert or breakfast to fuel your body. Delicious, keto friendly and gluten free protein amazing frecnh toast!

We are showing some love to all my frecnh toast lovers... never gets old! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Simply Delish Keto & Vegan Peach Jell Dessert as well, that I will add that thickness factor while keeping things low carb and delicious!

Soft and flavorful! The contrast of flavors and extremely creamy is just amazing, the jell dessert in peach is just another step up of the tres leches recipe, such a classic that I adore from Mexico. The coconut milk is just a great alternative and touch to this recipe! Soaked bread in goodness.


All these flavors in your mouth, all the creamy juices! The bread once baked created the perfect consistency to soak it in our delicious tres leches mix... this is perfect for brunch, dessert or breakfast!



You might want to save this recipe because a second recipe might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Tres Leches Strawberry & Peach Pudding French Toast

Serves 1-2 servings


Ingredients

French Toast

  • 4 slices of low carb bread

  • 1/2 cup of egg whites

  • 3 tbsp of almond milk

  • 5 packs of stevia

  • 1 tsp of vanilla extract

Tres Leches

  • 1 cup of hot almond milk

  • 2 tbsp of coconut milk powder

  • 1 tbsp of Simply Delish Keto & Vegan Peach Jell Dessert

  • 1/4 cup of chopped strawberries (for topping)


Method

  1. Preheat the oven at 350F.

  2. Mix the egg whites, almond milk, stevia and vanilla.

  3. Soak each bread and stack them in a baking dish.

  4. Bake for 18 minutes.

  5. Mix the ingredients for the tres leches.

  6. Create some holes in the baked french toast using fork and top with the tres leches mix.

  7. Serve and enjoy!
