There's something about cookie dough that instantly makes my tastebuds jump, anyone else or just me? Well, these protein pudding parfait is perfect no matter the time of the year, these are gluten free, low carb and extremely easy to make.

For this recipe I’m using amazing and fun ingredients such as vegan greek yogurt, blue spirulina for that color, Nuzest vanilla protein, and some keto chocolate chips. A great protein snack to fuel your body. Delicious, keto friendly and gluten free protein no bake protein parfait!

We are showing some love to all my cookie monsters! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Blue Spirulina and Nuzest vanilla protein for that cokie dough layer as well, that I will add that thickness factor while keeping things low carb and delicious!

This recipe is easy, quick and nutrient dense... also so fun!

Key Ingredients:

Adding some instant pea protein for extra creaminess and a satisfying filling. I have been also obsessed with the Nuzest Vanilla Pea Protein, perfect to add some thickness and create protein cookie doughs! The ingredients are simple, low carb and gluten free... plus the taste is just delicious.

And for that cookie dough I'm also using my favorite plant-based Nuzest protein in vanilla to keep to high protein and low carb.

Spirulina yogurt base and a delicious protein cookie dough, the dream team! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. While keeping your body strong and fueled with all the amino acids of antioxidants from the protein blend we are using.

Vegan Cookie Monster Protein Cookie Dough Parfait

Serves 1


Cookie Monster Layer

  • 2 tbsp of blue spirulina

  • 2 cups of vegan greek yogurt

  • 2 tbsp of alullose

Cookie Dough

* Or you can also use coconut flour.


  1. Mix the ingredients for the Cookie Monster Layer and add half of the mix into a glass.

  2. Mix the ingredients for the cookie dough and top the greek yogurt layer with it.

  3. Add another layer of greek yogurt mix and top with chocolate chips and more sprinkles.

  4. Enjoy!
