We are showing some love to all my cookie monsters! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Blue Spirulina and Nuzest vanilla protein for that cokie dough layer as well, that I will add that thickness factor while keeping things low carb and delicious!
This recipe is easy, quick and nutrient dense... also so fun!

Adding some instant pea protein for extra creaminess and a satisfying filling. I have been also obsessed with the Nuzest Vanilla Pea Protein, perfect to add some thickness and create protein cookie doughs! The ingredients are simple, low carb and gluten free... plus the taste is just delicious.
And for that cookie dough I'm also using my favorite plant-based Nuzest protein in vanilla to keep to high protein and low carb.

Vegan Cookie Monster Protein Cookie Dough Parfait

Serves 1
Ingredients
Cookie Monster Layer
2 tbsp of blue spirulina
2 cups of vegan greek yogurt
2 tbsp of alullose
Cookie Dough
4 scoops of Nuzest Vanilla Pea Protein ("PURELYHL" for discount) *
1/2 cup of unsweetened almond milk
1/4 cup of keto vanilla syrup (used Rx Sugar)
1 tbsp of dark chocolate chips
* Or you can also use coconut flour.
Method
Mix the ingredients for the Cookie Monster Layer and add half of the mix into a glass.
Mix the ingredients for the cookie dough and top the greek yogurt layer with it.
Add another layer of greek yogurt mix and top with chocolate chips and more sprinkles.
