White Chocolate Blackberry Blondies

Serves 12 servings


Ingredients

  • 2 cups of low carb gluten free pancake mix (used Perfect Keto PURELYHL for discount)

  • 1/3 cup of granulated monk fruit or alullose

  • 1/2 cup of Taste Europe, french butter room temperature

  • 1/3 cup of warm unsweetened almond milk

  • 1/2 cup of egg whites

  • 1 tsp of vanilla extract

  • 1/2 cup of blackberries

  • 1/2 cup of low carb chopped white chocolate


Method

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the mix, except for white chocolate and blackberries.

  3. Mix in the butter, egg whites, milk and vanilla.

  4. Add the white chocolate chips and blackberries, stir carefully.

  5. Transfer the batter to 12 silicone muffin cups.

  6. Bake for 15 minutes, let them cool down and enjoy!
