White Chocolate Raspberry Lemon Ice-Cream (Keto, No Churn)


So I have been prognosticating this moment, writing the blogpost by spending my time watching endless TikTok videos and probably making some with my dog Franky. But alright, the moment has come! Do you ever get those moments? Your mind is everywhere but where you really want it to be?


Well, this has ben me during this quarantine season. A girls gotta do what she's gotta do! And with that all the cooking and recipe testing. This week I bought two giant tubs of ricotta cheese from Costco because I'm still obsessed with it!


Ricotta cheese is just a very versatile ingredient that has a great amount of calcium and protein. So it makes a great snack, fueling and with a delicious taste.


Save this recipe for these warm days ahead! We will be experiencing all the summer flavors here and the best thing is that it was made in your home, without spending extra money on ice cream with funky and unnecessary ingredients.

Okay, so let me tell you. White chocolate, raspberry and lemon... together? EPIC. A must try combination with some basic pantry ingredients! I always have lemons in stock, raspberries on my freezer and for the baked goods essentials of course white chocolate!


For the white chocolate I used ChocZero, I love this brand because the ingredients are also minimal and they are low carb and even keto friendly. As my sweetener I usually use Granulated Monk Fruit (this is the one I use, code PURELYHL for discount)


For this recipe you'll only be requiring a bowl to mix your ingredients and that's it! No ice cream machine or any complicated manual methods will be used in this recipe. Easy peasy and perfect for the season!


These can also be turned into little ice cream cups by just pouring them into muffins cups, the classic. And to be honest that was the intention but the texture, taste and mix was more of an ice cream more than a cup. But it's definitely a great way to store them!


I also included some pili nut butter than can be substitute by coconut butter, this is a key ingredients to get that great taste and texture! Overall, we are going to use ONLY SIX INGREDIENTS!


Each serving, which is about 1/2 cup has 6 grams of fiber, 12.5 grams of carbs, so a total of 6.5g of net carbs. And 10.5 grams of protein!

White Chocolate Raspberry Lemon Ice-Cream

Serves 6 of 1/2 cup each

Ingredients

- 2 cups (500g) of ricotta cheese

- 1 cup of almond milk

- 1/2 cup of pili nut butter or coconut butter

- 1/4 (42g) cup of low carb white chocolate chips

- 1/2 cup (50g) of frozen raspberries

Method

1. Mix all the ingredients in a bowl in a bowl, make sure to add the melted pili or coconut butter.

2. Freeze a couple of hours and enjoy!

Fat: 19.9g

Carbs: 12.5g

Fiber: 6g

Net Carbs: 6.5g

Protein: 10.5g
