Berry Tres Leches Cake (Gluten Free & Low Carb)

I have to be honest, it's been a while since I wrote a blogpost and I missed it. Perfect for a recipe that I haven't eaten in a long while... Pastel de Tres Leches, a Mexican dessert and classic. A super moist cake, pretty much like poke cake.


This recipe is my version; gluten free, low carb and always delicious...and yes! Also simple to make! I promise that this cake is going to be a hit for your tastebuds and anyone that you are planning to bake this for!



About this Berry Tres Leches Cake:

So I decided to keep it super simple and use coconut flour for the reason that it creates thicker and denser cakes and this is just perfect because we don't want our cake falling apart from the liquid of the tres leches.


In this recipe we are using simple ingredients and nutrient dense. Coconut flour, greek yogurt, eggs whites, that's the base of the cake, and of course, granulated monk fruit and a touch of cinnamon and cardamom.



Moist and soft cake; gluten free, low carb and ven high protein. Always down for a challenge when it comes to recipes and I'm making it easier for you because you just have to follow the instructions; the mess was already made by me.



Made with simple ingredients and minimal steps that makes this cake even more convenient, only the best way to celebrate a birthday, a week or life!; gluten free, low carb and dreamy tasting snack, breakfast or treat.


And because we all love a good classic I decided to incorporate some berries to give that amazing and special effect in this cake. Perfect for Mexico Independence day celebrations!



You can have fun with this recipe and choose one of your favorite berries. In this occasion I had some frozen peaches, strawberries and blackberries from summer and these were just the perfect finishing touch to add some color too.

A very complete recipe here! They key is always choosing better ingredients; in this occasion we are adding that sweetness with granulated monk fruit as a replacement of regular sugar that has a lower impact in blood sugar.



Tres Leches Mix:

Okay, we are keeping it low carb and still delicious! We are using cream cheese, half & half cream (you can use organic!) and some keto coffee creamer from Super Coffee in vanilla flavor.


The original recipe uses condensed milk but it's loaded with sugars and making homemade condensed is also a great option but I ain't got the time so I used cream cheese to make it thicker and super coffee creamer to add that delicious flavor.


Super nutrient dense and extremely easy to make! Only mix the ingredients for the cake and the tres leches, for the frosting you only need to mix and done! Actually very easy to make, I created a reel on my instagram!

Moist and delicious cake. This cake is just a soft and flavorful recipe, the combination of the cream cheese along with the tres leches mix is just something else, you are going to just love it... plus it's easy to make!


As dessert, snack or breakfast! Yes, even breakfast, why not? There's plenty of protein thanks to the greek yogurt and egg whites, fiber from the fruit and coconut flour and sweetened with monk fruit, definitely better than your conventional box of cereal.



Perfect to enjoy at any time of the day; morning or evening. These can be also stored in the freezer and warmed once you need to satisfy that sweet tooth without all the inflammatory effects from gluten and sugars.


Pro tip: You can even prepare some more mix of tres leches and serve this in a bowl!

Berry Tres Leches Cake

Serves 8 servings


Ingredients

For the Cake

  • 1 cup of coconut flour

  • 1/3 cup of granulated monk fruit

  • 2 scoops of grass-fed collagen (used Marigold PURELYHL for discount)

  • 1/2 tsp of cinnamon

  • 1 tsp of vanilla Extract

  • 1 egg whites

  • 1 cup of greek yogurt

Tres Leches

Frosting

  • 160g of cream cheese

  • 1 cup of frozen strawberries

  • 1/2 cup of blackberries

  • 1/4 cup of frozen peaches



Method

  1. Preheat the oven at 350F.

  2. Mix the dry ingredients for the cake and then add the wet ingredients, mix well.

  3. Divide the mix in two separate silicone baking dishes 6-8 inches each.

  4. Bake for 20-25 minutes. Let them cool.

  5. Blend the ingredients for the tres leches.

  6. Place the cakes in separate plates.

  7. With a fork make some holes in both of the cakes and start pouring slowly the tres leches and it soak for a few minutes.

  8. Mix the cream cheese for frosting with monk fruit and vanilla. Spread half on top of a cake. Add part of the fruit.

  9. Top with the other half of the cake and spread the rest of the cream cheese frosting and fruit.

  10. Enjoy!
