This is a simple recipe that it's just so hard to resist... got my boyfriend as testimony, and my own tastebuds!


You only need one bowl and 5 ingredients, so double win for a mess free and delicious healthy recipe! One of the best parts of this recipe is that it's made with simple ingredients and it just takes a few steps to make! Using my favorite ingredients; My current obsession, Culina vegan coconut yogurt, some pancake mix to make things easier, banana and of course, some matcha.

We are showing some love to all my matcha and banana bread some love, and baking enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just adding some lavender blueberry coconut yogurt from Culina vegan coconut yogurt for that flavorful and vegan baking magic, also some cashews along with some blueberries on top.

Keeping it extra delicious, healthy and just epic by adding some crunch from cashews, and to make it even healthier some Culina vegan coconut yogurt along with some bananas mixed with the pancake mix. A great healthy recipe without sacrificing great taste!



Fuffly and moist bread with a nice touch of cashews chunks in the matcha! This is simply perfect for meal prep since they just require a few ingredients as well as minimal steps to make these little loaves, also ready yo attack that sweet tooth at any moment.

The base is made with simple ingredients, some vegan friendly pancake mix, some cashews, banana, matcha powder, vanilla extract and also some Culina vegan coconut yogurt.


The good thing about the ingredients that we are using, the bananas, pancake mix yogurt and the rest are all vegan friendly and just made with the simplest ingredients... made with no artificial colors, flavors as well or being free from corn syrups, hyronated oils and bleached flours.

Soft and flavorful! The bread is moist, soft and flavorful. The chunks of cashews and the bluebrries on top of the bread along with the banana bread base it's just a great and delicious experience for your tastebuds in a nourishing way.


Perfect to pair with a cozy cup of your favorite nut or regular milk, or a latte. Super cozy and you can even air fry it for a few minutes to make it even crispier! Slice it and freeze it for you to enjoy for later as well!

Blueberry Lavender Matcha Banana Bread

Serves 6-12 servings


Ingredients

For the bread

  • 1 cup of vegan protein pancake mix

  • 1/2 cup of granulated monk fruit

  • 1 small container of Culina Vegan Blueberry Lavender Coconut Yogurt

  • 2 tbsp of chopped cashews

Toppings

  • 2 tbsp of chopped cashews

  • 1 small container of Culina Vegan Blueberry Lavender Coconut Yogurt

  • Optional: extra blueberries and matcha


Instructions

  1. Preheat the oven at 350F.

  2. Mix all the dry ingredients for the bread, then mix well the wet ingredients.

  3. Transfer the batter to a silicone baking dish.

  4. Bake for 35 minutes, let it cool down.

  5. Add the toppings, slice and enjoy!
