Breakfast Veggie Pizza Casserole (Low Carb & Gluten Free)

Calling all breakfast lovers with this delicious casserole! Even if you are not a morning person or a breakfast food lover the idea of this Veggie Pizza Casserole might change your idea; nothing beats a good comforting casserole with cheese, bread and some veggies.


This was a recipe that was based on my Mocha French Toast Casserole, actually, the main idea of this recipe was to create a savory french toast casserole but as soon as I took it out of the oven my mom said; "Mmm, smells like pizza!" That was the moment that I knew this was more than just a savory french toast casserole.



Okay, so let's start about the basics; the ingredients in this recipe that will be not only delicious but also delicious. This will take your breakfast or brunch to the next level and it's just great to share with your loved ones too!



Here are the basic ingredients we'll need for this recipe:

  • Paleo Bread, one whole loaf (I baked my own using this brand)

  • Eggs

  • Mozzarella Cheese

  • Roasted Vegetables

  • Seasonings




For the paleo loaf I baked my own paleo bread by using this paleo and low carb flour that has been on rotation for the last couple of days! I got it at Amazon and it's really easy to make too! The brand is called California Country Gal (this is not a sponsored post, just love their products).



Still you can adapt this recipe to the ingredients you have, even use store bought bread such as a paleo bread from Mikey's or any other brand you prefer!
