Mexican Vegan Burgers (Keto & Gluten Free)

Hello everyone! Maria here with another delicious and meal prep friendly recipe coming at you but this time fully vegan and plant based! This Mexican burgers are just perfect as a side dish or even a vegan dinner!


This is a friendly recipe because it easy to make, it's great to cook on batches and you just need to throw all the ingredients into your food processor. That's it, as easy as that, you'll have a great recipe for your tastebuds to enjoy.



In this recipe I'm using simple ingredients, all gluten free, no dairy or any animal products so keep this recipe to share with your vegan friends, sure they'll appreciate the extra love and thought.



Besides making the most of these delicious ingredients I also kept it super basic and nutrient dense:

  • Almonds provide essential fatty acids and vitamins such as E, some of the B complex as well as minerals such as magnesium, selenium and zinc.

  • Cauliflower will add some vitamin C and antioxidants like glucosinolates and isothiocyanates plus it's also a source of folates.

  • Hemp seeds are another seed that will be used to add some texture, fatty acids like omega-3's and plant based protein. (PURELYHL for discount on Eaton Hemp Seeds and Hemp Products)

  • Flaxseeds will increase the fiber content, magnesium and more healthy fatty acids.



So you can be sure that this recipe is nutrient dense and delicious! Plus it's super versatile; I paired with with some guacamole or salsa. Epic combo and it hits the spot in so many levels!
