Keto Cheesy Breakfast Tarts (With Cali'Flour Flatbreads)

Oh guys! You are up to trouble with these bad boys, or at least I am! Eggs + cheese? Speaking my love language in one sentence. Happy to be breaking my fast with one of these... or not? Because these are keto friendly.


Technically, YES. This is a fantastic way to break for fast and to keep your state of ketosis. If you are new to the keto jazz here's what you need to know.



What's state of ketosis?

Our bodies can obtain energy from two main sources: glucose and ketones. So being in a state of ketosis is basically when your body is getting energy from fats.



How does our bodies create ketones?

Easy peasy! Our bodies don't need any manual to learn how use ketones as fuel, but this is what needs to happen when we begging to use ketones as energy.


When our bodies run out of carbs (glucose), insulin drops and the pancreas begins to secrete glucagon which tells our fat tissue to stop being a jackass and send some of their stored fat into our bloodstream. That fat travels to the liver where they get converted to ketones. These travel through our blood stream and provide energy to our brain and tissues.



As a nutritionist I love the science behind the Ketogenic Diet, but I'm not here to tell you what diet you should follow. Like I always tell my clients; "We are going to do what it works best for YOU!"


The point here is that this recipe is ketogenic friendly, but of course, it can be eaten and made by anyone! Unless you are vegan of dairy intolerant.


ANYWAYS! This recipe definitely hits the spot for any tome of the day, you name it!

  • Brunch? Hello!



I'm part of the team breakfast for dinner. I'm always down for eggs, any time of the day, they are eggcellent! And so does this cheesy tart!

In ingredients and the method of this recipe is also extremely easy and can be made by anyone! Egg and cheese lovers, we are coming for you. So you get the idea now about how much I love eggs, I have them basically every single day and my preferred way is sunny side up, so in this recipe I wanted to keep the yolk runny.



For this recipe we are going to need:



Super simple ingredients and all of them will go over that delicious and keto friendly Cali'Flour Flatbread, my faves! Because they are super versatile and fun to bake with! For example try my Easy Raspberry Ricotta Cannolis HERE!


These are just the proof that these can be great in sweet or savory recipes! Also, these Zucchini Poblano Keto Quiches. I also used some of their flatbreads and they were a winner for the whole family.



For the assemble:

  1. Preheat your oven at 350F.

  2. In two individual tart baking dishes place the flatbread.

  3. Add the cheese making sure they are equally divided.

  4. Add the salsa and egg.

  5. Sprinkle seasonings.

  6. Bake for 12 minutes.

So if you don't feel like taking our some pans or skillets, maybe you are hosting a brunch or lunch... these are perfect to serve because they do add a great presentation, plus the taste is amazing! They will probably be asking for seconds maybe!



This recipe makes for two servings... but I ate the two of them. "Sharing is caring", I know! So that's why I made a second batch to share with my family, who also loved these!

  • 2 Eggs

  • 2 Cali'Flour Sun-Dried Tomato Flatbreads (PURELYHL for discount)

  • 1/2 cup of shredded mozzarella cheese

  • 1/4 cup of chunky salsa

Method

  1. Preheat your oven at 350F.

  2. In two individual tart baking dishes place the flatbread.

  3. Add the cheese making sure they are equally divided.

  4. Add the salsa and egg.

  5. Sprinkle seasonings.

  6. Bake for 12 minutes.
