Creamy Green Bean Baked Chicken (Keto & Paleo)

It's that time of the year where comfort foods always sound like a great idea! With the temperatures decreasing slowly a good creamy and veggie loaded meal is just like a hug for the soul and body.


In this occasion I decided to create this nutrient dense and comforting recipe for several reasons; these type of meals is just what our bodies need to stay strong and healthy... specially during this pandemic!



I included one of my staple ingredients! Bone broth.

Bone broth contains amino acids that promote collagen production, this is perfect to show and get some nourishment to our gut because major part of our immune system is in our guts!



Zinc is also an essential mineral that helps our immune system stay strong, along other nutrients bone broth has vitamin A, K, selenium, manganese, phosphorus, magnesium and calcium.



As you can see bone broth is a simple but nutrient dense food that can be easily be added into any recipe! On today's recipe I added some of Proper Good Chicken & Mushroom, which is made with chicken breast and bone broth.

Creamy Green Bean Baked Chicken. This recipe really reminds me of thanksgiving, the Chicken & Mushroom Soup really reminds me of my mom's gravy recipe! Along with the green beans, peas, carrots and sun-dried tomatoes this recipe is just perfect for this time of the year!



This recipe is EXTREMELY easy to make, you only need a blender and your oven! Making this recipe great for meal preps too!



Here are some of the ingredients we will be using

I think that lime juice is always a key ingredient for my recipes, specially when we are using meats since the acidity of the lime juice keeps the chicken nice, juicy and tender. After adding the lime juice I always add the seasonings, in this case, dried parsley, sea salt and black pepper.



For the recipe I made a quick cauliflower mash to create an extra creamy and thickness factor, that before baking I mixed with three quarters of the Chicken & Mushroom Bone Broth Soup. Pouring this mushroom and cauliflower mix is the next step of the recipe.



Veggies are the final step before purring the chicken in the oven, make sure you have reheated it at 350F. The carrots can be raw or slightly steamed, as you prefer. I added them raw and they god nicely cooked with the chicken.



Once the chicken is baked you can serve it with a loaded salad, a gluten free bun in you'll like and for meal preps you can reheat this on the microwave for a couple of seconds or in the little oven!


For dinner or lunch, this recipe will be just perfect to nourish your body in a delicious and simple way! Using nutrient dense ingredients; all the veggies and bone broth! That personally I think it should be your main star ingredient... for life!

  • Sipping it in a cup with some lime juice (my favorite!)

  • Using to cook stews and meals

  • Soups

  • To cook veggies

  • As a replacement of water in savory baked goods!

As a nutritionist, take me advice... embrace the bone broth in your life! It's going to make you so much good, and prepare veggie loaded recipes!

Creamy Green Bean Baked Chicken

Serves 6


Ingredients

  • 6 pieces of chicken breast

  • 3/4 of Proper Good Chicken & Mushroom Bone Broth Soup Pouch

  • 3 tbsp of lime juice

  • 1 cup of steamed cauliflower

  • 1/4 cup of chopped carrots

  • 1/2 cup of green beans

  • 1/4 cup of sun-dried tomatoes

  • 1/4 cup of peas

  • 1 tbsp of dried parsley

  • 1/4 tsp of black pepper

  • 1 tsp of sea salt

  • 1/4 tsp of dried garlic

Method

  1. Preheat your oven at 350F.

  2. In an iron skillet place flat the skinless chicken breasts.

  3. Add sea salt, black pepper, dried parsley and lime juice.

  4. In a blender add the steamed cauliflower with salt and garlic to taste.

  5. Mix the cauliflower mash with the bone broth.

  6. Pour the mix over the chicken breasts.

  7. Top with the veggies.

  8. Bake for 45 minutes.

  9. Let it cool down and serve.
