Candied Pecan Sandies (Keto and Gluten Free)

Here coming at you with one cookie recipe, I feel like my site lacks cookie recipes and that needs to be fixed. Just in time for the holidays this is a recipe you might want to save no matter what time of the year!


if I'm completely honest this recipe wasn't was I was planning on doing, but the results were satisfying! A simple and delicious pecan sandies made with nothing but low carb candied pecans.



Candied pecans! another classic of the season and I made mine in minutes, free of mess and low carb using two four ingredients!



For the candied pecans:

  • 1/4 cup of raw pecans

  • 1/2 cup of granulated monk fruit

  • 1/4 cup of water or less

  • 1 tsp of xanthan gum



The process is also super simple. Firstly in a pan add the pecans and let them toast for a little bit, add water and granulated monk fruit and mix well. Continue stirring until it broils, you may add more granulated monk fruit if you want to. Before the water evaporates add xanthan gum and continue moving.



Add the candied pecans into the cookie dough mix. And that's it! This recipe was a true winner among my family, plus they love candied pecans, and raw pecans. This cookie recipe is also great to pair your hot cacao or morning coffee!



The ingredients overall are simple, and they include a touch of protein powder to add some extra amino acids, consistency and flavor. The one I used is from Nuzest, so so good and it blends so well into smoothies or in this case, baked goods! You can also use the code PURELYHL for discount.



Candied Pecan Sandies:

If you'll like to turn this recipe to a vegan friendly one you can just replace the egg for a flaxseed egg and the ghee for coconut oil. The flavor shouldn't change that much, plus coconut oil also adds a great flavor to them.



They are also easy to make and they feed a crowd! So you can bake these for your Christmas safe gathering, as a gift for your friends in a beautiful mason jar or as a meal prep since they are easy to prepare.



How to make these cookies

  1. Preheat the your oven at 350.

  2. Mix all the dry ingredients in a deep bowl.

  3. Incorporate eggs, liquid and ghee. Set aside while you prepare candied pecans.

  4. Firstly in a pan add the pecans and let them toast for a little bit, add water and granulated monk fruit and mix well. Continue stirring until it broils, you may add more granulated monk fruit if you want to. Before the water evaporates add xanthan gum and continue moving.

  5. Add candied pecans to the dough.

  6. Make 21 cookie balls using a cookie scooper.

  7. Bake for 15 minutes.

  • 4 scoops of Nuzest Vanilla Protein (PURELYHL for discount)*

  • 1 tsp of cinnamon

  • 1/3 cup of granulated monk fruit (PURELYHL for discount)

  • 1 tbs of baking powder

  • 1 egg

  • 1/3 cup of melted ghee or coconut oil


Candied Pecans
