I kept it very easy and I used grain free cookies that I had in my pantry, I used Siete Foods Mexican Shortbread cookies but you are free to add your favorite cookies, but these have a great taste and they are made with some ingredients!

These were a hit in my family! Had my godfather and my cousins over for the weekend and we enjoyed these along with a good wine... but alone they still rocked! The combination of flavors and textures is just fantastic and hard not to love!

CBD Cherry Cookie Cheesecake

Serves 9 servings
2/3 cup of almond flour
1 cup of egg whites
1/3 cup of granulated monk fruit
1 tsp of baking soda
1 tsp of cinnamon
6 pieces of grain free cookies (used Siete)
2/3 cup unpitted cherries
1 block (8oz.) cream cheese room temperature
1 tsp vanilla extract
1/4 cup of crushed keto candied pecans (used Marigold)
2 scoops of grass-fed collagen (used Marigold)
3 tbsp of granulated monk fruit
1/4 cup of low carb chocolate chips
Optional: a few drops CBD DREAM from Bloom Farms
Preheat the oven at 350F.
Mix the almond flour, coconut flour, baking soda, cinnamon and monk fruit in a deep bowl.
Add the egg whites and mix until fully incorporated.
Spread the batter in a 8x8 silicone baking dish or greased baking dish.
Bake for 20-22 minutes.
Mix the cream cheese (room temperature) with vanilla extract, CBD and spread over the baked and cooled base.
Add the cherries, crushed pecans, chocolate chips and cookies.
Refrigerate for 1-2 hours and enjoy!
