These simple and no bake bars are just the perfect summer snack! All the summer flavors here, with all the nutrient dense foods included... hard to guess these are even healthy! Simply popping and not just only because of the popcorn!


And guys, I have been all about those summer flavors, colors and all the jazz... you know? This weather has got my mood pumping into all the fun and I'm here to spread some of these flavors!



About these Tropical Popcorn Freezer Bark Bars:

Well, I'm a fan of popcorn, always have been and the fact that it's a gluten free snack and that the ideas with popcorns are endless besides just throwing them into your mouth and hope you catch it, from a good movie night. We can all agree that popcorn is FUN.


These bars are vegan, low carb and gluten free... making us pop about all the summer flavors.



I used some plant based protein in vanilla flavor it add some volume, flavor and nutrient density. The one the I typically use is from Nuzest, made with simple ingredients plus it's also low carb, this is one of the parts that makes this recipe thicker, along with those strawberries. Besides some of the reason of adding so much colors from the seasonal berries I decided to add more color in honor of June, pride month! Love is love and it should always be celebrated, don't you agree? Well, if you are down for a celebration save this colorful recipe!



The perfect afternoon snack, dessert for a summer sunny day! To share or not to share. These are just a great and delicious snack bar; source of protein, fiber and antioxidants.


For the fiber here I used the coconut . That also adds that coconut and lime flavor. And for the rainbow here, a lot of berries here!

  • Strawberries

  • Popcorn

  • Kiwi

  • Granulated Monk Fruit



Loaded with vitamins, minerals from the coconut butter and protein this pie recipe is truly another level and seriously irresistible! You can even add some collagen powder to add some gut health too for a non vegan option, don't worry about the superfoods, they don't alter the taste but they just add some color!



To keep everything low carb I used my favorite sweetener that replace sugar 1:1, this is the granulated monk fruit from Lakanto, this is a great keto friendly and diabetic option for all my sweet pies out there.

Tropical Popcorn Freezer Bark Bars

Serves 9 servings


Ingredients

Base

  • 2 cups of greek yogurt

  • 4 tbsp of granulated monk fruit

Top Layer:

  • 4 cups of Lesser Evil's Popcorn in Grapefruit

  • 1/4 cup of frozen strawberries

  • 1 piece of a kiwi

  • 1/2 cup of coconut butter


Method

  1. Mix all the ingredients for the base.

  2. Press the dough into a 8x8 silicone baking dish.

  3. Top with the strawberries, kiwi and popcorn.

  4. Finally drizzle the coconut butter.

  5. Freeze for 4 hours or overnight.

  6. Cut into 9 pieces and enjoy!
