Well, I'm a fan of popcorn, always have been and the fact that it's a gluten free snack and that the ideas with popcorns are endless besides just throwing them into your mouth and hope you catch it, from a good movie night. We can all agree that popcorn is FUN.
These bars are vegan, low carb and gluten free... making us pop about all the summer flavors.
I used some plant based protein in vanilla flavor it add some volume, flavor and nutrient density. Tropical Popcorn Freezer Bark Bars

Serves 9 servings
2 cups of greek yogurt
4 tbsp of granulated monk fruit
4 cups of Lesser Evil's Popcorn in Grapefruit
1/4 cup of frozen strawberries
1 piece of a kiwi
1/2 cup of coconut butter
Mix all the ingredients for the base.
Press the dough into a 8x8 silicone baking dish.
Top with the strawberries, kiwi and popcorn.
Finally drizzle the coconut butter.
Freeze for 4 hours or overnight.
Cut into 9 pieces and enjoy!
