Okay, so we all have heard about the benefits of cranberries and that's AMAZING! My dad loves cranberries and that's a major win for picky eaters because liking something that's good for you is always great! But today I'm telling you more about cranberry seeds, these little powerhouses!

I mean, chocolate, coconut and pecans? Plus we are adding that boost of nutrients powered by the Cranberry Seeds and some hemp seeds.

Here are some of the ingredients that we'll be using for these Cranberry Seed Chocolate Joy Bars:

  • Vanilla pea protein

  • Almond flour

  • Cinnamon

  • Granulated monk fruit

  • Hemp seeds

  • Shredded coconut

  • Pecans

  • Almond milk

  • Dairy free chocolate chips

If you have been around my blog before you might notice that something that really accentuates my recipes are the different colors that I incorporate, as a nutritionist is important for me to add different colors that will also mean different phytonutrients.



We are staying away from artificial colors and choosing all natural colors, in this case "the pop" of color in this recipe, our natural and gorgeous sprinkles will come from Cranberry Seeds.


Asides being nourishing this recipe is extremely easy to make! Minimal mess and with plenty of servings that will make this a great snack or dessert for the week! Who also preps snacks?

Cranberry Seed Chocolate Joy Bars

Serves 16


Ingredients

  • 2 tbsp of Cranberry Seeds

  • 1/2 cup of vanilla pea protein

  • 1/2 cup of almond flour

  • 1 tsp of cinnamon

  • 1/2 cup of granulated monk fruit

  • 3 tbsp of hemp seeds

  • 2/3 cup of shredded coconut

  • 1/3 cup of pecans

  • 1 + 1/4 cup of almond milk

  • 1 cup of dairy free chocolate chips


Method

  1. In a large bowl mix the pea protein, almond flour, monk fruit and cinnamon.

  2. Add half of the pecans, shredded coconut and hemp seeds. Mix again.

  3. Add the almond milk and mix until you get a dough consistency.

  4. Pour the mix into two silicone loaf pans and freeze for one hour.

  5. After an hour, melt the chocolate and pour evenly over the dough mix.

  6. Spread the rest of the shredded coconut, pecans and hemp seeds.

  7. Sprinkle the Cranberry Seeds.

  8. Freeze again for a couple of hours (2 hours or overnight) and cut into pieces.

Net Carbs: 1.8g
