Vanilla pea protein
Granulated monk fruit
Dairy free chocolate chips
If you have been around my blog before you might notice that something that really accentuates my recipes are the different colors that I incorporate, as a nutritionist is important for me to add different colors that will also mean different phytonutrients.
We are staying away from artificial colors and choosing all natural colors, in this case "the pop" of color in this recipe, our natural and gorgeous sprinkles will come from Cranberry Seeds.

Can I freeze this recipe?
Keep these in the freezer! Cut the bars into 12-16 slices and have them ready to grab inside your freezer in a safe container. That way you have a great and delicious way to kick that sweet tooth away!

Cranberry Seed Chocolate Joy Bars

2 tbsp of Cranberry Seeds
1/2 cup of vanilla pea protein
1/2 cup of almond flour
1 tsp of cinnamon
1/2 cup of granulated monk fruit
3 tbsp of hemp seeds
2/3 cup of shredded coconut
1/3 cup of pecans
1 + 1/4 cup of almond milk
1 cup of dairy free chocolate chips
In a large bowl mix the pea protein, almond flour, monk fruit and cinnamon.
Add half of the pecans, shredded coconut and hemp seeds. Mix again.
Add the almond milk and mix until you get a dough consistency.
Pour the mix into two silicone loaf pans and freeze for one hour.
After an hour, melt the chocolate and pour evenly over the dough mix.
Spread the rest of the shredded coconut, pecans and hemp seeds.
Sprinkle the Cranberry Seeds.
Freeze again for a couple of hours (2 hours or overnight) and cut into pieces.
