These are going to be extremely creamy thanks to the sunflower seed butter and coconut flour base, some of those pieces of pineapple will also go inside these little pies, the rest are for toppings.
Toppings are also essential in this recipe, it was makes us feel like getting caught in the rain (ring a bell?) and even if you are not into yoga or have half of brain... (okay, I will stop now) you are going to love this simple and indulgent recipe.
Summer in a bite!
Each one of these bites have 8.9 grams of total carbs, 4.1 grams of fiber, so that's 4.8 grams of net carbs and also 4.8 grams of vegan protein. These are also great of you are into meal prep sweet goods such as me! Because we all now that when the sweet moods hits it's important to have something nourishing instead of reaching for those empty calories.
Also kid friendly! A great way to sneak in some extra nutrients, and I say that this recipe is kid friendly because I know about picky eaters... my dad is one of them. The key is to never tell them something is healthy, they won't even notice.

Tahini Peaches Vanilla Pies

Serves 12
Ingredients
1/2 cup of coconut flour
1/3 cup fo granulated monk fruit
1/4 tsp of cinnamon
1/2 cup of frozen pineapple in chunks
3/4 cup of sunflower seed butter
Toppings
1/2 cup of frozen pineapple in chunks
1/4 cup of shredded coconut
1/4 cup (1.6 oz) of low carb grain free granola
Method
In a bowl add the dry ingredients for the base.
Add liquid, pineapple and mix well. Incorporate the sunflower seed butter.
Mix until there are no lumps left.
Pour the mix into twelve silicone muffin cups.
Add the toppings
Freeze for a couple of hours.
