Maple, chocolate and pumpkin latte flavors! But with that I also wanted to include a twist, a fun a de delicious twist by just adding some of keto candied pecans to add more flavor, texture and of course, a delicious glaze made with monk fruit.

The base is so basic, I kept it very easy and uncomplicated and decided to use a low carb vanilla cake or cupcake mix. In this recipe I used ZenSweet that's also gluten free and it worked very good with this recipe.
Using cake mix for the recipe really saved me some steps such as adding baking soda, more monk fruit and vanilla. So there's a new lazy baking hack for you to use!

Giant Maple Pumpkin Glazed Donut

Serves 8 servings
Ingredients
Donut
1 cup of your favorite low carb vanilla cake mix (I used this)
1/4 cup of Nuzest Vanilla Pea Protein - (PURELYHL for discount)
2 eggs
1 cup of Super Coffee - Maple Pumpkin Coffee (SUPERMARIA for discount)
Glaze
200g grams of granulated monk fruit
50 ml of unsweetened almond milk
Toppings
1/4 cup of keto candied pecans (used Marigold)
1/4 cup of low carb chocolate chips
Method
Preheat the oven at 350F.
Mix the dry ingredients for the donuts.
Add the eggs and super coffee, mix well.
Pour the mix into giant silicone donut mold (I divided the batter in two, but you can use one and cut in half once baked).
Bake for 24 minutes. Then let it cool down.
Blend the granulated monk fruit for the frosting until you get powdered monk fruit.
Add the almond milk and mix well.
Once baked add some of the frosting in one of the half of the donut. Top with the other half and add more frosting. Add your toppings.
Enjoy!
