No matter the season, ice cream are always a yes in my book! But these chocolate mint ice cream bars... in a keto marshmallow treat bar is out of this world! This recipe is also gluten free and extremely easy to make and of course, using all the best ingredients such as Perfect Keto Marshmallow Mallow Munch.


No bake "rice krispie treat" and delicious ice cream cake! One of the best parts of this recipe is the no bake part... so basically is just mix, pour and refrigerate type of method, extremely easy! But this ice cream cake is just the perfect dessert or snack without all those tons of sugars our bodies don't need.

Brownies and rich mint chip chocolate flavors! But with that I also wanted to include a twist, a fun a de delicious twist by just adding some of cherries to keep it seasonal, keto ice cream and the simple base!


To add that extra magical factor of this recipe I also included some of the Perfect Keto Marshmallow Mallow Munch Bars, such a game changer! And it really brings up that extra taste of rich flavor and just another extra texture. This ice cream cake is EPIC!

Soft and flavorful! The contrast of flavors and textures is just amazing, the brownies are our extra topping are just divine... the chocolate mint ice cream with the keto marshmallow bars all together and it's just so hard to resist!


Melts in your mouth! The chocolate chip mint ice cream and the brownies on top makes this whole recipe dream... soft and chewy, just perfect to enjoy no matter the season.



You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Keto Chocolate Mint Ice Cream Marshmallow Crispy Bars

Serves 8 servings


Ingredients

Crispy Mallow Base

Filling

  • 1 pint of (2 cups) of chocolate mint keto ice cream

  • 1 cup of greek yogurt

  • 2 keto brownies (used Salivation SnackFoods)


Method

  1. Press two of the mallow munch bars in a silicone baking loaf dish and refrigerate for a few seconds. You can heat it up for 30 seconds to press them down easier.

  2. Repeat this step with the other two bars to create two layers.

  3. Mix the ingredients for the filling, leave some brownies for topping.

  4. Top the first layer of the mallow munch with the ice cream mix and top with the other munch mallow bar.

  5. Top with the rest of the ice cream and crumble up the rest of the brownie.

  6. Freeze overnight, cut into 8 pieces and enjoy!
