There's something about neapolitan desserts that instantly makes my tastebuds jump, anyone else or just me? Well, these protein pudding cake is perfect no matter the time of the year, these are gluten free, low carb and extremely easy to make.


For this recipe I’m using amazing and fun ingredients such as greek yogurt, keto friendly chocolate pudding, strawberries, and some melted keto chocolate. A great protein snack to fuel your body. Delicious, keto friendly and gluten free protein no bake pudding cake!

We are showing some love to all my neapolitan lovers... so underrated sometimes! But with that I also wanted to include a twist, a healthy and still delicious twist by just adding some Simply Delish Keto & Vegan Vanilla Pudding Mix and Strawberry Jell Dessert as well, that I will add that thickness factor while keeping things low carb and delicious!


This recipe is easy, quick and nutrient dense... also so fun!

Adding some instant pudding mix for extra creaminess and a satisfying filling. I have been also obsessed with the Simply Delish Keto & Vegan Pudding & Jell Mixes, the ingredients are simple, low carb and gluten free... plus the taste is just delicious.



Chocolate pudding, vanilla and a delicious strawberry, the dream team! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. While keeping your body strong and fueled with all the amino acids of antioxidants from the protein blend we are using.

The end result

Soft and flavorful! The contrast of flavors and extremely creamy is just amazing, the protein here makes the greek yogurt pudding bars extra thick, soft and chewy! The flavor of the chocolate pudding is there and the texture of the almonds is just the best topping ever.


Melts in your mouth! It's soft and chewy, the greek yogurt with the chocolate pudding layer is just a divine combination, plus the strawberry jello with those pieces of the fruit is just perfect!



You might want to save this recipe because a second recipe might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Neapolitan Pudding Bars

Serves 8 servings


Ingredients

Vanilla Layer

  • 1/2 pack of Simply Delish Keto & Vegan Vanilla Pudding Mix (PURELYHL for discount)

  • 1 + 1/2 cups of greek yogurt

Strawberry Layer

  • 1 + 1/2 cup of greek yogurt

  • 1/2 pack of Simply Delish Keto & Vegan Strawberry Jell Dessert

  • 1 cup of chopped strawberries


Chocolate Layer

  • 1/3 cup of melted low carb chocolate


Method

  1. Mix the ingredients for the vanilla layer and spread it into a silicone loaf dish.

  2. Mix the greek yogurt with strawberry jell dessert and top the vanilla layer with it.

  3. Top with strawberries.

  4. Freeze overnight, cut into 8 pieces.

  5. Top with melted chocolate and freeze again.

  6. Enjoy!
