Oh guys, cookies and peanut is my love language, there's always something about this duo that must drives my tastebuds nut... but what if we add some cream cheese to the formula? We get what we all have dreamed of, all in a delicious and secretly healthy snack!


Gluten free and low carb delicious peanut butter chocolate chip cheesecakes made with simple and real ingredients! One of the best parts of this recipe is that it's extremely easy to make and it just requires less than 6 ingredients!



About these Peanut Butter Chocolate Chip Cheesecakes:

These are just every cookie, cheesecake and peanut butter lover dream! But with that I also wanted to include a twist, a fun a de delicious twist by just adding some of chocolate plant based and keto friendly brownie bars on top and by also using Good Phats Keto Cookie Mix.


To add that extra crunch factor of this recipe I also included some of cruncy peanut butter, such a game changer! And it really brings up that extra crunch, plus is blends so well with the cookie mix and cream cheese.


Key Ingredients:

Keeping it very very easy by using keto cookie chocolate chip mix. I have been also obsessed with Good Phats Keto Cookie Mix, since it's also keto friendly, gluten free and even paleo... just so versatile. This will be the base for our little cheesecakes, along with the cream cheese and peanut butter of course.



The cookie chocolate chip mix and the chunky peanut butter... crunch factor! These are simply perfect for meal prep, no need to bake anything at all to enjoy and attack that sweet tooth at any moment. The base is soft and the filling of these is creamy thanks the the organic cream cheese... also source of probiotics!


I also used some crunchy peanut butter to add that crunch. My favorite plant-based and keto brownie bar ones, Core Foods plus the chocolate chip cookie mix from Good Phats Keto Cookie Mix... they really don't go cheap with those chocolate chips.


The Sweetener of these Peanut Butter Chocolate Chip Cheesecakes:

With a delicious addition of alullose instead of refined sugars for the win! In this occasion I used a homemade version of alullose from Rx Sugar which is made from foods while having no calories or a glucose impact.

Soft and flavorful! The contrast of flavors and textures is just amazing, the toppings are just divine... the keto brownie bars with the cookie base work perfectly with the creamy cream cheese mix and of course, peanut butter... all flavors in one bite. JUST MADNESS!


Melts in your mouth, these are so chewy and soft! The ketobrownie bars bars bring up that amazing crunch factor too that makes these even more satisfying. My family loved these bars, they didn't even know these were low carb and healthy!



You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to make some more.

Pro tip: You can also drizzle some melted chocolate to make them even prettier and tastier!

Peanut Butter Chocolate Chip Cheesecakes

Serves 12 servings


Ingredients

  • 1 cup of Good Phats Keto Cookie Mix

  • 2 eggs

  • 1 block (8oz) of organic cream cheese

  • 1 tsp of vanilla extract

  • 1/3 cup of alullose

  • 1/4 cup of peanut butter (I used chunky)

Topping


Method

  1. Mix the cookie mix with the eggs and place in twelve silicone muffin cups.

  2. Mix the cream cheese (room temperature) with vanilla extract and alullose and top the cookie dough with it.

  3. Top with peanut butter and using a tooth pick create swirls.

  4. Add the keto brownie bars on top.

  5. Bake for 24 minutes, let it cool down and enjoy!

Net Carbs: 7.7g (just minus fiber)
