Oh well, hello guys! If you are a pizza lover like me and a lot of people around the globe then you are going to LOVE this recipe. A fun skillet recipe that creates a delicious and easy combination of hot pockets and pizza... in a paleo and low carb version!


Pizza skillet, something about this combination sounds just so comforting right? And it's even better when you transform those comfort and fun foods into a paleo and low carb version!



Less inflammatory ingredients!

By now we now that there are some ingredients that when they are consumed they may cause inflammation in our bodies and those foods include; refined vegetable oils, wheat, dairy in some cases! It will also depend of the type and source.



So if you are looking for a better-for-you pizza recipe then you hit jackpot with this delicious recipe!


Well, for this recipe I used some Mikey's Pepperoni Pizza Pockets, these are certified gluten-free and dairy free! They are ready to use, just pop them into your oven or air fryer and done. And for this recipe they were THE HIT!



Here are the simple ingredients for this Pizza Pocket Skillet!



Since we are keeping this recipe nourishing I used Otamot vegetable sauce, it's loaded with vegetables and sugar free! Love it, very versatile and yes. Taste just are marinara even though it's packed with vegetables, that's what make it so special!



How to make this EASY Pizza Pocket Skillet... the best and easy? Heck yeah!

  1. Preheat the oven at 350F.

  2. Bake the pizza pockets for 10 minutes.

  3. In the meantime, whisk the eggs with seasonings and vegetables.

  4. But the pizza pockets into 0.5 inch squares.

  5. Pour the egg mix into an iron skillet.

  6. Add the pizza pockets around the skillet.

  7. Bake for 30 minutes.

  8. Let it cool down, cut into 8 slices.

  9. ENJOY!

As you can see this recipe is easier than it looks! That's always a double win when it comes to recipes, right? Plus less mess too, we only used a mixing bowl for this. So if you are planning on hosting a brunch, lunch, dinner or even breakfast (hello eggs!) this is a great recipe to consider.



You can have this along with some roasted veggies, if you are skipping the dairy free part go ahead and top it with some cheese or ricotta (maybe dairy free cheese too!). The ideas are endless.
