Tilapia Tacos with Ginger Mango Slaw

Serves 4


Ingredients

For the Tilapia:

  • 4 tilapia fillets

  • 1 teaspoon Nutiva Original Secret Coconut Aminos

  • ½ teaspoon garlic powder

  • ⅛ teaspoon black pepper

  • 1 teaspoon sea salt

  • ½ teaspoon paprika

  • 1 tablespoon Nutiva Liquid Coconut Oil

For the Ginger Mango Slaw:

  • 1 cup shredded cabbage

  • ¼ cup chopped cilantro

  • 1 jalapeño, chopped

  • ⅓ cup chopped red onion

  • ½ cup chopped mango

  • 1 tablespoon monk fruit sweetener

  • Juice of 1 lime

  • 1 teaspoon powdered ginger

  • ½ teaspoon garlic powder

  • ¼ teaspoon sea salt

  • ½ cup Greek yogurt (whole milk)

Serving

  • Tortillas

  • Chives

  • Lime (optional)

  • Red Pepper Flakes


Instructions

  1. Slice the tilapia into slices and marinate with coconut aminos and seasonings for at least 30 minutes.

  2. In the meantime, prepare the slaw by washing and chopping the vegetables and mango.

  3. Mix all the ingredients for the slaw in a bowl and set aside.

  4. Preheat a skillet with the coconut oil. And cook the fish on medium high heat for 2-3 minutes per side.

  5. Heat your tortillas and stuff them with fish, top with pineapple and serve with red pepper flakes and chives. Squeeze lime on top and enjoy!
