Spaghetti Squash Miso Cheddar Fritters

Serves 4
Ingredients
For the Fritters
1 cup of shredded and cooked spaghetti squash
1 cup of cooked chicken rice (used Minute Rice)
1 cup of shredded Gardner's Wisconsin cheddar cheese
1 tsp of sea salt
1/8 tsp of black pepper
1 tsp of garlic powder
1 whole egg
2 tbsp of red miso paste
Toppings
1 cup of organic sour cream
Red Pepper Flakes
Green Onions
Instructions
Preheat your waffle maker.
Mix all the ingredients for the fritters in a large bowl.
Fill the waffle maker with the fritter mix and cook for 5-6 minutes, until golden crispy.
Repeat the last step with all the fritter mix.
Mix the ingredients for the sauce and serve the fritters with it.
Add optional pepper flakes and onion flakes and enjoy!
