Strawberry Shortcake Popsicles (Vegan & Low Carb)

Guys, you are up to trouble with these popsicles, I know I am! They are just a perfect summer or spring weather snack or dessert filled with flavors, protein and textures that will make the other popsicles very jealous!


Okay, so these popsicles are also vegan, gluten free and low carb! Made with some of my favorite ingredients that will be great to share with your loved ones throughout the season, stick around for the details on this recipe.

Now that I'm setting the mood for the summer these popsicles sounded like the perfect summer dream to make, in a popsicle! The method is super easy and the results are mind blowing!


For the mix I used a combination of nut milk mixed with some of my favorite plant based protein, Nuzest in Wild Strawberry to give it that extra touch of flavor and protein. You can use the code PURELYHL for discount!



Dreamy and soft pinky popsicles with a touch of Mexican shortbread cookies. For the shortbread effect of this recipe I simply used the Grain free Cookies from Siete, Mexican Shortbread. Also a major throwback to my childhood because these cookies are a must to enjoy your coffee in the mornings in Mexico.



Made with simple ingredients and minimal steps that makes these cinnamon rolls even better and convenient, only the best way to start the day; gluten free, vegan, keto and dreamy tasting popsicles.


To step up the game of these popsicles and to add a little bit of extra flavor and textures I decided to add a some chocolate into the formula. Plus I think that strawberries and chocolate can never get it wrong when they are together!



You can have fun with this recipe and choose one of your favorite healthy chocolate bars, in this occasions since I wanted to keep it healthy and vegan I picked one of Evolved Chocolate Bars in Cashew Butter.

These are soft, not hard thanks to the use of the protein powder that adds thickness to them! The combination so textures it just amazing and every lick and bite it's just a lick close to heaven (I know, lol).


Just by imagining the taste of the chocolate, shortbread cookies and strawberries just makes me want to drool again and make some more of these dreamy popsicles!



You might want to save this recipe because a second batch might be needed here! I shared some of the cinnamon with my friends but they were just too good as my afternoon snack after crossfit or dessert!

Strawberry Shortcake Popsicles

Ingredients


Method

  1. Blend the nut milk with strawberries, cinnamon and protein powder.

  2. In 10 silicone popsicle mold place chopped cookies and chocolate into the bottom.

  3. Add the strawberry blend on top.

  4. Add popsicle sticks and freeze overnight.

  5. Optional: drizzle coconut butter and top with crushed cookies.
