Serves 8 tacos
Ingredients
1 bag of corn tortilla chips
1 1/2 cup of shredded cheese
1 cup of queso sauce
Chipotle Albacore Tuna
2 cans of Wild Planet Albacore Tuna
1 tbsp of chipotle puree
3 tbsp of avocado oil mayonnaise
1 tsp of taco seasoning
Toppings
1 cup of corn
1/3 cup of finely chopped cilantro
3 tbsp of finely chopped red onion
1 chopped roasted jalapeño
1/3 cup of Mexican cream
3 tbsp of cotija cheese
Instructions
Preheat the Oven: Set your oven to 350°F (175°C) to prepare for baking your nachos.
Prepare the Chipotle Albacore Tuna: In a mixing bowl, combine the Wild Planet Albacore Tuna with the taco seasoning, avocado oil mayonnaise, and chipotle puree. Mix until the tuna is well-coated and flavorful.
Assemble Your Nachos: Arrange a layer of corn tortilla chips in a baking dish. Top the chips generously with the prepared chipotle albacore tuna and sprinkle with shredded cheese.
