The BEST Mocha Crunchy Bars (Keto, w/ Magic Spoon)


Having the house for myself could only mean a few things, the most important one: all the recipe testing and a messy kitchen since I have all the space without a single soul to ask me what I am even doing.


The thing is that at first I usually don't know what am I doing. I get some ideas in my mind and then I start creating a fusion of the ingredients and ideas I've got in my head. And to be completely honest, not all recipes turn out as I expect them to be.


Sometimes you get a better result, sometimes the results have a good twist. We never waist ingredients! That's my life tip for you here; don't waste food, just give it a nice twist.


But in today's recipe that wasn't the case. No twist was needed, thankfully everything worked out, tastebuds approved! In a dense, delicious bar with great layers. Perfect enough to impress your family, friends and even yourself the next time you have an event, or no event! It doesn't matter. The yumminess is still there.

For each bar (this recipes makes 9), we've got a total al 10.1 grams of carbs and 6.5 grams of fiber that comes from the almond flour, almond butter, pecans and Magic Spoon Cereal. Overall we have 3.6 grams of net carbs and 11.2 grams of protein.


This is why this recipe is easily a great afternoon snack or post workout. We didn't use any protein powder, this comes from ricotta cheese, nuts and again, Magic Spoon Cereal (purelyhealthyliving for discount).



You may already noticed that this is my absolute favorite cereal! Let me tell you why. It's a major comfort food for me! I grew up feeding myself cereal, that was my breakfast and even dinner sometimes (just imagine all the sugar there!)


Magic Spoon only has 3 grams of net carbs per serving (3/4 cup), has 11 grams of protein, it's gluten free, has no sugar alcohols or sweeteners, it actually uses alullose which it has no glycemic impact and it is from natural sources. Plus it doesn't have any artificial flavors or soy.

Anyways, back to the recipe! This is pure magic, THREE LAYERS of delicious flavors and as you can see these are thick! This is why I decided to use a 8x8 baking dish, because I needed something that could guarantee me the thickness without overflowing the ingredients.


What you'll need for this recipe:


- 1 8x8 baking dish

- 1 measuring cup

- 1 mixing spoon

- Waxed paper

- Oven


That's basically it. Don't let the layers fool you, this recipe is super easy to make and we will be baking only one of them, the bottom layer.

The BEST Mocha Crunchy Bars

Serves 9

Ingredients

Base.

- 1/2 cup of almond flour

- 1/2 cup of almond butter

- 2 Tbsp of water

Ricotta Layer.

- 2 cups (500g) of ricotta cheese

- 1 Tbsp of cacao powder

- 1/4 cup of granulated monk fruit

- 1/4 cup of black coffee

Toppings.

- 1/4 cup (25g) of raw pecans

- 1/4 cup (42g) of low carb chocolate chips

Method

Base.

  1. Preheat the oven at 350F.

  2. In a bowl mix the ingredients of the base and press into a 8x8 baking dish, greased or with waxed paper.

  3. Bake for 16 minutes.

Ricotta Layer.

  1. Mix all the ingredients and blend.

  2. Pour the mix into the baked base.

  3. Add the toppings.

  4. Freeze for a couple hours.
