We are showing some love to all my bread pudding enthusiasts... this recipe is for you! But with that I also wanted to include my personal, an extra healthy but still delicious twist by just using lady finger cookies instead of toasted bread and a touch of coconut, raisins, and of course, vegan cheese.

Keeping it extra delicious, healthy and just epic by using some lady fingers for the pretty pop of color and nutrients, and to make it even healthier we are using RxSugar alullose as our sweetener, some vegan cheese, bananas, coconut, peanuts, and of course some baked lady finger cookies. A great healthy recipe without sacrificing great taste!

The base is made with simple ingredients, some peanuts, coconut, macadamia milk, bananas, and to keep things sweet some RxSugar alullose, and for the lady finger cookies. The perfect texture for this french toast casserole.


Feel free to to use your favorite low carb sweetener, I used RxSugar alullose (MARIA20 for discount) but I also love using alullose or stevia for my baked goods; always a staple in my baking pantry for sure, and essential for healthier desserts.

Vegan Capirotada (Mexican Easter Bread Pudding)

Serves 1-2 serving


Ingredients

  • 6 lady finger cookies

  • 1 1/2 cup Milkadamia Vanilla Macadamia Milk

  • 1 large banana

  • 2 drops of orange essential oil

  • 1/8 tsp of anise flavor drops

  • 1/4 tsp of cinnamon

  • 5 tbsp of sugar alternative

  • 1 tsp of vanilla extract

Toppings

  • 2 tsp of unsweetened shredded coconut

  • 1 tbsp of raisins

  • 1 tbsp of crushed peanuts

  • 1/4 cup of shredded vegan cheese

  • 2 tbsp of dye-free sprinkles


Method

  1. Preheat the oven at 350F.

  2. Blend the sweetened, banana, vanilla, macadamia milk, orange essential oil and anise.

  3. Place the lady finger cookies in a small container.

  4. Pour over the blended mix.

  5. Add the toppings, except for the dye-free sprinkles, bake for 18 minutes.

  6. Let it cool down, add the sprinkles.

  7. Enjoy!
