Anyone else fan of eggnog? This delicious and comforting bread pudding casserole is everything you need for your vegan Christmas dessert option... and secretly healthy and low carb as well, simply irresistible!


With a touch of coconut, nutmeg, clove and cardomom! One of the best parts of this recipe is that it doesn't take to be a baking expert to nail this vegan recipe, with my food chemistry background from my years at university I'm creating this delicious and healthy recipe using NO eggs, NO dairy, No gluten or NO artificial ingredients.

About this Vegan Eggnog Bread Pudding:

Okay, so we are being and feeling all the festive vibes over here with that touch of eggnog... without the eggs but with all the flavor. I'm also using some plant-based bread from Little Northern Bread, in this recipe I kept it classic by using their Chia & Millet loaf.

Key Ingredients:

Adding some coconut milk powder and cashew butter for extra flavor and nutrients. Since we are not using heavy cream or eggs I wanted to add that thickness factor that resembles the traditional eggnog with some coconut milk powder and cashew butter, the combination of these two is just perfect to give it that caramel-ish flavor!


And of course, along with the spices that includes; clove, cinnamon, cardamom and nutmeg.

This is simply a major combo that you cannot resist, hard to believe that this is also low carb and gut friendly! Little Northern Bread is also gluten free which tends to be easier to digest and just the perfect option to avoid getting that annoying bloat feeling during the holidays.



The base of the Pudding:

The base is made with simple ingredients; Little Northern Bread, that I toasted on my air fryer. I simply chopped the bread into cubes and air fried it for 8-10 minutes... it should look nice and golden.


That's our base, from that it's all about the eggnog mix that I will detail next!

You might want to save this recipe because a second batch might be needed here! I shared some of the pops with my friends but they were just too good as my afternoon snack after crossfit or dessert that I had to bake some more.

Pro tip: You can also drizzle some melted chocolate to make this look even prettier and tastier!

Vegan Eggnog Bread Pudding

Serves 9 servings


Ingredients

  • 5 pieces of Little Northern Bread Millet & Chia Bread

  • 1/4 cup of coconut milk powder

  • 2 scoops of vanilla pea protein powder

  • 1 tsp of vanilla extract

  • 1 tsp of cinnamon

  • 1/8 tsp of cardamom

  • A dash of clove and nutmeg

  • 1/3 cup of cashew butter

  • 1/3 cup of granulated monk fruit


Method

  1. Preheat the oven at 350F.

  2. Cut the bread into square pieces and toast them in the oven for 12-15 minutes.

  3. Mix the rest of the ingredients very well (you can use your blender too).

  4. Add the toasted bread in a greased 8x8 baking dish and top with eggnog cream and spread using a spoon.

  5. Bake for 18-20 minutes.

  6. Let it cool down and enjoy!
